Well, yes and no, you still want the flavor and texture to be balanced, not every veggie fits well in fried rice, and some meat&veggie combo just doesn't work well.

@@kayleyjo Side dish? A fried rice is literally a main dish that stands on its own. Like...you wouldn't call spaghetti and meatballs a side dish, would you? When you sit down at restaurant, spaghetti and meatballs is gonna be in the main course/entrée section, not the appetizer/sides section. Same for a fried rice dish. Ain't NOBODY calling it a side dish bruh. PS: The most common and popular Chinese street food items are skewers, that's the go-to...not exactly a fried rice. Ain't nobody is like "Let's go to the night market for some fried rice!"

Well, like Yang said, it's a yes and no. Yeah you can throw whatever you want in a fried rice; there's a lot of room for mix and matching, but you want the flavors to work in harmony. Just like how you can make a sandwich with different combinations of meats, veggies, and cheese but that doesn't mean any random concoction you come up with is gonna end up tasty.

There's so much culturally authentic food content for Chinese food out there (Chinese Cooking Demystified, Made With Lau, Jimmy O Yang's KZbin) that we Chinese North Americans have almost no excuse to present something inauthentic - pick a KZbin recipe that you feel comfortable, copy it, don't skip steps, google substitutes. Given we have these resources, what shows on the plate is mainly a lack of effort or connection with the culture.

I really enjoy this series, but I feel like Chris (producer) gets more and more vocal and involved every time... And I don't like it. Let the person trying the dishes make the decisions and draw their own conclusions, and stop throwing the contestants (cooks) under the bus.

Nah, I think it’s fair that he asks questions to prompt for more from her and gives information about the dish. It seemed like throwing them under the bus because the contestants in this video were cutting corners lol. In the other videos, the other guys made everything from scratch and all the works, which were also mentioned to the girl. So the additional information is useful and fair, it tells her how much effort goes into it too. She can’t make that good a judgment off just the taste and presentation hahaha.
