his bistek was way off to what's common back in the ph. she even said herself, taste like it needs more soy sauce. and what the heck is with vinegar as a dip? i've eaten bistek so many times during my 20 years in the ph never heard or seen anyone eating it with vinegar. the calamansi or lime would have been sufficient to add sourness to it. the dish clearly doesn't need any dip at all.

Dont cut meat before marinating. The problem is that water and the juice goes to were theres more solutes, meaning it follows the salt. If you have seasoned marinade which you should, you should marinated before cutting. If not then you should brine and then marinade. Or just brine season and have sauce separately. No need to marinade in the sauce you serve it in.

It's like every household has their own version of Kare-Kare. It's a very delicious but complex dish to make. I too have my own beef and twalya recipe, never complete without banana heart and veggies and bagoong alamang at the side. Sometimes I cook it in sizzling version. Not the best recipe, but I just love it when my family gathers to eat it and it's the important part of the dish.
