I am not surprised that James didn't care for them. Perhaps it's a a matter of a less mature palate but he did say he thought the bacon too crispy and didn't like the red stuff. Perhaps it was simply a matter of expecting something different then what the dish actually. I know adults who would not like them. I can respect his preference and appreciate his honesty and that you encouraged him to be truthful and not feel bad about it. Kudos.

Love how you supported your son to share his true feelings, while you were able to share your appreciation of the food without minimizing your boy. This is the kind of stuff that lets kids grow into amazing human beings that can remain close to folks, even when they disagree, without having to sacrifice their own voice. Gotta share this story. I made the beef and barley soup from a few videos back. Invited my friends over with their 4 year old. The kid eats chicken nugget, mac and cheese and apple juice, no fooling. Let me tell you she walked into the dining room, got in her dad's lap and ate a whole bowl. We almost cried. Picky baby ate, so that recipe was a winner.🤩 I didn't appreciate clams casino until my late teens so I understand James on that one. I really enjoy them now😊

Love you two so much; so sweet and funny together! James is really developing a very discerning palate. I actually cried a little bit when James was struggling over the fact that he didn't love the dish. It shows an incredible amount of compassion and kindness in him. Shellfish for most kids would be tough. I'm seeing a ton of recipes using clams and oysters this year. Compared to so much food right now, they are relatively inexpensive. Oyster Rockefeller were a tradition at our house in the Midwest. Lots of shucking .... but so worth it. I also do garlic clams from "Bistro Cooking at Home" by Gordon Hammersley. You would love that book! Merry Christmas!!!

I went to a family dinner recently, one of the sides was baked brussel sprouts with garlic, romano, S&P, and a drizzle of olive oil. I was so impressed at how simple yet incredibly delicious it was! My teenage daughter said it was so terrible and she would never eat a bite of anything like that for the rest of her life. We all like different things and maybe it has something to do with age. I said "I'll have yours"!!! 😊

When my kids wouldn't eat brussel sprouts, I would steam them, let them cool down just a bit, then marinate them in zesty Italian dressing and chill. All 4 of my kids like them any way they are cooked now, unless over cooked.

I first had clams casino on my first trip to NYC at a restaurant in Little Italy and I thought it was one of the most delicious foods! I've had a bacon clam experience before and I immediately found the bacon to be over powering. It felt like a bacon dish with clams rather than a clam dish with some bacon flavor (which maybe this was what James was expecting)

I respect James' opinion too ... not every food is for everyone. Me personally, I love clams, I love bacon, I love red bell peppers, I love garlic ... would only omit the red chilli flakes on first try and then maybe add some on second try. Hey Jim, I had to check out your recipe since my family makes these every Christmas Eve. Our recipe is very different. We use green pepper, and don't pre-cook the filling. We also add lots of lemon juice to the bread crumb mixture. I do want to try partially cooking the bacon. It's fascinating how everyone has different versions of this dish.

James is 100% right. Clams are delicious when you make them the star of the dish (e.g. Linguine alle Vongole), but if you cover them up with other flavours, it doesn't work as well. The first time I ate Clams Casino was at a favorite(of the masses) Italian Restaurant in my city. I was not impressed. Like James, the bacon overpowered the mild tasting clams. Fast forward several years and I am eating them as often as possible!!! 🌿

Ok, I have to admit I was shocked by his review! Growing up in our Italian home, my father insisted on red squid sauce each Christmas Eve. I couldn’t stand the smell let alone eat it! I would make garlic butter sauce for my capellini! Yes, I was a brat! But, as an adult I now love the red squid sauce. Our tastes truly do mature & evolve. Perhaps someday he will have his own cooking channel & feature this recipe with his own twist?! Maybe he would prefer to chop the bacon & add to the stuffing? I’m totally making these for New Years. Texturally, clams are really love 'em or hate 'em, and a lot of kids don't seem to go for them. I think he'll probably grow into it. I tend to make skewered shrimp as an accompaniment to clam appetizers for my own taste testers. I'm absolutely giving these a try, though!
