the white "tendon" you keep referring to is actually not a tendon, but a muscle, the adductor muscle. It's the same part of the clam we eat as a "scallop." just that a scallop has a particularly large and tender adductor muscle.

I’m almost positive that Littleneck clams won’t drown in water. We’ve always put them in a tub of just enough water to cover them with a few cups of corn meal, over night, unrefrigerated. They eat the corn meal which cleans of the unsightly green stuff. They’ve always come out sweet and tender. I’m definitely going to try this recipe. Thanks mate! You’re the best!

This is true. I dig for clams. Put them in a pot of cold water with a couple tablespoons of corn meal (it helps filter out grit and sand). Put in fridge. Change water and corn meal every day. Clams will be good for a week. 😊

My aunt would make clams casino sometimes when I visited her. So good. Being in central Ohio, she didn't have access to super fresh clams (probably canned, but she loved fresh ingredients), but she had a nice set of large shells she would present in.

Love your channel! Growing up in New England a lot of your recipes are things I grew up eating via my italian grandma. I can't wait to try this one! My favorite way to cook stuffed clams is offset on the grill with some hardwood smoke hitting 'em. Game changer for a summer smokey meal when I want to change it up from dogs and burgs. Also as a videographer, I want to suggest some key lights off to the sides, since super cheap rechargable LED's are available now, I think it'd make you pop off the screen a bit more and separate the background. Just a suggestion, but your channel is fire either way! Thank you and please keep it up!

Makes sense in preparing clams this fresh during the hot days of summer vs. taking a risky chance on buying bottled pickled Herring in cream sauce that sat out on the loading dock at the supermarket four hours too long before sketchy clerks discover their error and attempt to refrigerate it again before loading it into the display case, resulting in a tough stale flavor. Would think pickled Herring is at its best second week of September. These clams look delicious and ready to prepare now. Can't wait to try them.

He said it in the video bruh. It's fine but makes it harder to cook evenly and you may need more clams to get a decent amount in each one. So more expensive, more chopping, doesn't cook as well. I work at a steakhouse and we serve clams casinos as a big seller, sometimes you get orders for "chopped" casinos. Some people just don't like the texture of a whole clam so do what you want mane.

Hey i have a "doubt" with this we usually speak about clams, oysters, and other seafood with shell to be alive before cooking for freshness. And we put them trough boilling water or roast in an oven. But i dont remember since when putting a lobster in boilling water and all that is considered inhuman/ illegal in some places.

@@alexisveron I "execute" my lobsters with a sharp knife before cooking, but like everything there may be some contradictions and inconsistency in my life as I always cook smaller shellfish directly with no compunctions. There's not really any other way to do it as far as I know.
