Six Summer Salads | What's For Dinner? | Cook With Me 2021 Join me as I share some of our favorite summer salad recipes. Simple sides, classics with a twist and a Sheet Pan Salad!

0:52 Sheet Pan Salad
2 lbs medium potatoes, cubed
1 onion, cut into thick wedges
1/2 lb fresh green beans
Juice of 1 lemon
1-2 tsp Dijon mustard
1 tsp salt
1 Tbs olive oil
feta cheese
Preheat oven to 425 degrees F. Combine onions and potatoes in a large roasting pan with olive oil and salt. Roast for 30 minutes. Add green beans and roast for 15-20 minutes more. In a large bowl, whisk together lemon juice, mustard and 1 Tbs oil. Add roasted vegetables and crumbled feta cheese; toss to coat and serve warm or cold.
4:24 Classic Carrot Salad
4-6 medium carrots, shredded
1/4 cup golden raisins
juice of 1 lemon
1/2 tsp salt
1/4 cup mayonnaise
In a large bowl, whisk together lemon juice, salt and mayonnaise. Add carrots and raisins, toss to coat and serve.
6:04 Spinach Salad
Dressing:
1 small onion, pureed (or 2 Tbs dried, minced onion)
7 Tbs sugar (or less to taste)
1 tsp dry mustard
3/4 tsp salt
1 cup oil
1/2 cup cider vinegar
1 Tbs poppy seeds
Combine all ingredients and whisk to combine.
Toss together 1 package of baby spinach, 1 cup of sliced fresh strawberries or mandarin oranges, 1/4 cup walnuts, pecans or sunflower seeds, feta or blue cheese, and 1/4 cup salad dressing. (Store remaining dressing in refrigerator).
8:15 Kale Cobb Salad
10:40 Chili Lime Cole Slaw
1/4-1/2 cup mayonnaise
1/4 cup sweet pickle relish
1/4 cup cider vinegar
1 Tbs Chili Lime Seasoning
1 small head of green cabbage, shredded
1 carrot, shredded
Combine the first 4 ingredients to make the dressing. Add the cabbage and carrots; toss to coat and serve.
13:05 Bean & Basil Salad
1 can Black Beans, drained and rinsed
1 can Garbanzo Beans, drained and rinsed
1 can of Corn, drained and rinsed
3-4 Persian Cucumbers or 1 small English cucumber
(they have very small seeds - I love them!)
1/2 cup cherry tomatoes
Fresh Basil
1/4 cup Olive Oil
1/4 cup Cider Vinegar
1 Tbsp Sugar
1 1/2 tsp Salt
Finely chop the basil, dice the cucumbers; cut the cherry tomatoes in half or quarters.
In a large salad bowl, whisk together the chopped herbs, oil, vinegar, sugar and salt. Add the cucumbers, tomatoes, beans and corn. Toss well with the vinaigrette. Refrigerate for 30 minutes or longer and serve.

great ideas. I have made a black bean and corn salad for years, I think it was Rachel Ray's recipe, but sometimes I add a can of chopped green chilis and sun dried tomatoes if it is winter,.....it is good

Sitting down to watch this ,without knowing the content, while my dinner cooks-and can you believe -I'm cooking roast cubed potatoes with green beans!!!! I even store my potatoes in the exact same wire basket from Ikea here in UK. Must try adding feta next time. Thanks for some great ideas.

All of these looked so wonderful! When you were making the coleslaw and putting on your chicken tacos, I thought of a recipe that is a copycat from applebees. its not a salad, but their won ton tacos and I don't top it with the coleslaw like in the restaurant. instead of using coleslaw, I substitute broccoli slaw! it makes them so crunchy! that is what I like the best about most salads that I make is the crunch! thanks for sharing! xoxo

They all look delicious. Lee and our son Daniel don't like very many vegetables and they are picky with how those are prepared as well. For instance, both love french fries. Lee likes potato salad but Daniel doesn't. Occasionally they like baked, fried, or mashed. I love them prepared in any way. They only like baked beans and kidney beans. Lee will do salads and adds cottage cheese to his along with the dressing. Daniel doesn't like salads. I do a simple stew of seasoned stewed tomatoes or diced canned tomatoes, black beans, and corn I got it from a cookbook. Just heat through and it's ready. For potlucks, most people just want lumpia (fried egg rolls) and pancit (stir-fried rice noodle dish). Most people are fans of those. My friends always requested those at my birthday parties. I usually want sinigang (Filipino sour soup and my most favorite food; it's also the only way to get Daniel to eat most green vegetables as I usually add broccoli, spinach, chard, lettuces, cabbages, and okra to mine; he doesn't like the turnips and radishes I also add; he does love the tomatoes I add) and two chocolate hot dogs (donuts shaped like hot dog buns with buttercream icing down the middle, dusted with powdered sugar, and three slashes of chocolate on top; they are their best selling item; if you don't get there early they will be sold out of them although they dedicate a whole case to them; they are closed on Sundays and Mondays so I have no luck with that when my birthday falls on those days; should find something else for those times; maybe a panettone or cheesecake) from a local bakery on my birthday.
