No, one is light soy sauce for flavour and dark soy sauce for colour. They are not sweet soy sauce.

If you don’t have a hot plate, you can use a non-stick saucepan. Otherwise you can also serve on a regular plate, just make sure the gravy is piping hot and serve immediately. 😄

If using a non stick pan, just warm up the pan and pour the egg mixture on it till half done, just like how you would on the hot plate. You can serve the dish on the pan itself.

You can get Chinese cooking wine from Asian grocers, or you may omit it from the recipe as well and it will still taste great either way 😄

For the sauce, use one and a half cup of water (1.5 cups).

Frying egg tofu is a pain, the oil splashes everywhere prporprpoprpop😭 but they are delicious, I love them. I usually scramble them in my egg and fry with little oil

Yes, you are right. Leaving them on kitchen towel to drain off excess water after cutting may help to reduce the splattering. But the deep fried bean curd tastes so much better than pan fried.

Cooking wine is used to remove fishy flavor of the food. Not using it is also OK.
