For anyone that doesn't know its poss-ette not whatever that guy said at the start lmao. Poss like possum ette like etsy. Posset is an old English dessert, it used to be very popular in summer. Adding sugar stabilises the cream and allows you to add acid without it curdling and you can use any citrus you want, there are also alcoholic versions, white wine was sometimes used. Lemoncello would be good in it.

Little tip for someone who uses lemons to cook almost everyday. If you ever need to core a lemon like this recipe calls for. Roll it on your countertype before cutting, put your hand over it and apply pressure while you roll it, not enough to break the skin but enough that you feel it get squashed. Once you cut it open the flesh will come out easy, the effectiveness varies from lemon species, and it tends to work better with lemons that have a thicker peel. Additionally your kitchen gets to smell like lemons from all the oils the peels release when you roll it.

Roll the lemon before cutting, on a flat surface roll down firm and move it around a lot, this will help it pop out, or put it in a bowl of warm water for a few minutes to warm up, it’ll help then too and take off any wax on the skin. 😊

I just got to say, I love how real this. The too small work area all the cooking shit in the back, stuff on the fridge, packed dish washer. This is what my old place looked like often. Back in the 60's and 70's, roll around utility carts with an extention cord input were a common way to maximize storage and provide more working room and counter top surface for using small appliances, in a tiny kitchen or break room set up. It's a damned shame that you don't see these inexpensive, highly practical and helpful carts around anymore.
