For today's recipe on Swine Life BBQ, I wanted to reinvigorate what a Thanksgiving Turkey was... I spatchcocked it, skinned it and got to work smoking this bad boy in my Outlaw Patio. This WILL BE your new Thanksgiving tradition!

Skinless & Spatchcock Smoked Turkey
Ingredients:
Recipe:
Get your turkey and make sure to allow plenty of time to thaw in the Fridge.
This recipe is pretty straight forward and you can make it your own really easy! The only major difference would be removing the skin. This gave us the opportunity to make some great bark on this bird.
Get that bird seasoned and injected... Get it on your pit at 275-300. Once you get the color you want, wrap it up with some butter. Start your glazing process when the bird hits 155 and finish the cook at 160-165.
Never be scared to try something different and enjoy the cook!

Great twist on a turkey Mark! I do believe this is the first skinless turkey cook I've seen. Can't argue with the results! Excellent!

Absolutely fantastic stuff. Followed this recipe to the "T" last thanksgiving and now my family won't let me NOT cook the turkey every thanksgiving and christmas. Thanks Mark.

Tried this as an experiment 2 weeks ago. Amazing. I’ve never been able to preserve the skin on a smoker and it kills me to see all that hard work slide off the meat and be rubbery. This solved that and my family couldn’t even tell it was skinless. I’ll be doing a second attempt today. Great stuff Mark

Of course everybody on the Internet is doing a turkey right now and I just watched Malcolm Reeds before this one and yours is the one I want to try I've never done one without the skin and it looks amazing.

Been spatchcocking the turkey for years but I’ve never seen anyone remove the skin. Definitely will give this a try this year.

Just FYI because of your video I used this method on thanksgiving and it was a hit. Only difference was I spatchcocked the turkey. Having the seasoning directly on the meat instead of the skin makes it more flavorful.

Hey Mark, how did you like these results vs the wet brine and more traditional cook you did last year? Also, I noticed the you used all apple cider for that wet brine vs half cider and half water, was the all cider better?

I definitely liked the flavor in the skinless turkey. I bet if you brined it also it would be outstanding. I think the apple cider was great! Most store bought apple ciders aren’t that strong and don’t need to be diluted. But I am also a huge fan of ciders LOL...

It actually cooked a good bit faster. About 2.5 hours.

Interesting recipe, but I would always advise spatchcocking a bird with shears, using a knife to do that is just too dangerous.
