Thanks for this video!! I wanted to see if I could do it without butcher paper, and it came out just fine! You have to freeze your pizza first: Roll out crust and lay it on a wax paper -lined sheet pan sprinkled with a little cornmeal. Add toppings. Freeze for a couple hours. When the smoker is preheated, take the pizza off the wax paper and put directly onto the smoker grate. Bake at 500° for about 10 minutes.

I have a Santa Maria attachment for my Weber kettle grill. With picanha steaks, I get charcoal and hickory wood burning and start the picanha about 2 feet above the fire. After I get it up around 120, flipping once, I set the steaks up on end balanced on each other with the fat side down and lower the grill down to just above the fire. The fire jumps to the fat, flares up and it only takes 30 seconds for the fat to render perfectly. Made some today with grilled small potatoes and carrots in a butter sauce. Fantastic Sunday dinner. Like Guga says, Queen of steaks. Thanks for the video!

Your wiring isn't up to code and you shouldn't run and 120 or 240 v circuits without that even in a trailer. Simple fix is run the wires inside conduit or flex conduit. Plastic is cheap about $1 per foot. If someone put a nail or screw in the wall or you pinch wires you can shock someone or burn the trailer down

Haha! Up to code? May not be but it’s light years better than 90% of Rv manufacturers. That plastic conduit ain’t gonna stop and nail or screw either. You about 3 year too late. Might burn down tonight but has been the best trailer I have ever owned.

It’s clear how long to smoke at 225° for 45 minutes. I know it’s hard to put a firm time on how long to smoke at 300°, but trying to gauge about how long it’ll take to get to 120° for an 8lb cut so I can plan timing before I cook it. Thank you for any help you can provide!

Honestly would allow at least 2 hrs for the cook. That will give you time for a rest too.

Perfect cook but I don’t think it’s necessary to rest it for 15 minutes. Five should be sufficient for a steak that size especially if you want it to still be hot when you’re eating it.
