Thanks for the kind words about the ashes. It helps me remember him and to keep him in my thoughts as much as possible. I've afraid he'll fade away. I missed Nina by days, twice in 2024 but we had and epic night out in Fort Lauderdale. She was dressed as 'Teeth" and I was 'The Tooth Fairy'.

@@OliveOilandGasoline Sea temps are rising and the little critters that give the colour bailed. Bleaching, has been the worst on record in the last decade. The reef still exists, but is getting sicker. Climate change is real. The effects are starting to happen, slowly, insidiously. Like the frog in the pot of water that keeps getting hotter, until it boils/dies, without the frog realising it's peril. Even Nina would say the reefs a wan version of what it used to be. I certainly can/do.

@@OliveOilandGasoline Lol, 97% of scientists believe man/women caused. I'm 66 now and was a garbo for 20 years. Starting 48 years ago. Everyday I went to work I saw the sunrise and worked outside in the elements. It's changed. Rather than argue endlessly, the easy question I ask now to climate change deniers is "if your wrong, what's your plan B". Not one has given me a thought through response.

Hey Brennan; since you a chef I want take this opportunity to ask you this question. Whenever I try to pan sear a piece of meat, (chicken, pork, beef steaks) I seem to not be able to caramelize the middle of the meat. I place the meat in the middle of the pan but I seem to always form a ring around the middle. I want to get an even maillard reaction on the meat like I see when people grill/broil it. Tell me what is going on please. Maybe if Nina sees this she can answer too.

Hmmm, I think maybe your pan isn't flat? Having a good pan is really important. Also making sure your protein is dry helps a ton. Try using a cast iron skillet.
