Buffalo chicken home fries with hot chilli sauce and creamy blue cheese
1kg floury potatoes, such as Maris Piper or King Edward, cut into 2cm cubes Low-calorie cooking spray
4 cooked skinless and boneless chicken breasts, shredded and brought to room temperature
50g fat-free natural Greek-style yogurt
4 level tbsp hot chilli pepper sauce 2 celery sticks, finely sliced
50g Gorgonzola cheese, crumbled
10g fresh chives, finely chopped
Preheat your oven to 200°C/fan 180°C/ gas 6. Spread the potatoes on a large, non-stick baking tray or in a large baking dish in a single layer. Spritz with cooking spray, season and bake for 40 minutes, or until crisp and golden, turning halfway. While the potatoes are in the oven, mix the shredded chicken with the yogurt and 2 level tbsp hot sauce.
Evenly scatter the chicken mixture and celery over the potatoes, then evenly scatter over the cheese. Evenly drizzle over the rest of the hot sauce and top with the chives. Either bring to the table or divide between 4 bowls.
