The Hillbilly Kitchen - Down Home Country Cooking

Күн бұрын

I miss all of the little Sloppy Joe faces that my four kids had when they were little. I usually made it for them after church on Sundays because it was quick and easy to make and they all four loved it.
After they ate their Sloppy Joes, they put on their bathing suits and swam in our pool the rest of the day. Now Charlotte is old enough to eat Sloppy Joes and her Aunt Alex just bought her a new wading pool :)
Ingredients:
2 lb. - Ground beef or ground chuck
1/2 cup - Ketchup
1/2 cup - BBQ sauce
Onion powder
Salt and pepper

Becky mentioned about draining the greese from the pan and discarding it. I did that in the past until I discovered that I was sacrificing a lot of flavor for a gravy. When I make my sloppy Joes and any other hamburger based dish that requires the meat to be drained I drain it into a strainer over a bowl. Then I put that liquid into a Tupperware container and put it into the freezer and let it freeze for about an hour or so just to separate the fat from the broth. Than I skim the fat off the top of the broth and wrap it up with aluminum foil than I put it back into the freezer and also I freeze the broth aswell in its container. When I make a gravy I use the fat to make a roux for my gravy and use the broth as its base. I feel that this makes a more favorable gravy When I am having a steak and mashed potatoes. For, there is a great flavor carry over.

I know this is an older video but it could be a scene from my kitchen today. Me cooking and in the background would be the Andy Griffith show, the Waltons or something older that was some wholesome entertainment. Can't beat the older stuff with some great older recipes. Thanks for all your recipes, they keep me trying things that my family grew up on in the 1960's. Oh yeah, I'm a 60+ man and my wife is watching TV while I do the cooking. Can't help it, been cooking for myself and others since I was quite a bit younger. Thanks again.

Love the recipes. Another way to get rid of the grease is to take a little foil and line a cup. Pour the grease into the foil. After it solidifies, throw it in the garbage. It seems like I throw all my cans out the day before I need them. Never fails. Blessings to you.

To Drain Your grease from hamburger, what I do is get a mixing bowl and a colander. I put colander over bowl and drain grease in bowl. When cooled some I put in garbage and take bag out. If I do need a teaspoon of grease reserved I have that or when cooked discard..

I have a helpful hint for you as you were discussing the disposal of the grease.. I move all the meat to one side of the pan allowing all the grease to pool on the other side. I FOLD A PAPER TOWEL UP FAIRLY SMALL AND LAY IT IN THE GREASE ALLOWING THE PAPER TOWEL TO ABSORB THE HOT GREASE. REMOVE THE TOWEL AND DISCARD.. YEAH !! GREASE GONE..

I usually dice 1 large onion, and cook it for 5 min first. With 1 tsp salt, and 1 tablespoon olive oil. Then I toss in the meat, and cook for 7 min on medium. Drain the meat greece. Add in tomato sauce, tomato paste, and seasonings/tobasco sauce. Cook for an additional 15 min and bam. Good to go.

I dont know why but we put our grease in a plastic coffee can till the can is about 1/2 full then throw the can out with the trash. Just have always done it that way. Might go back to the old days when folks saved bacon grease but now we just put it all in the coffee can and toss it out. We also use a screen over the sink. Have a garbage disposal but dont let anything go down the sink but liquids. Plumbers are expensive.

HFCS is not as processed as people think, nor is “normal sugar” - or sucrose - as clean as people think. Both of these are derived from botanical sources. Sugar comes from sugar cane or sugar beets while HFCS comes from corn.
@TheHillbillyKitchen
@TheHillbillyKitchen 8 жыл бұрын
Books have been written on the dangers of HFCS, but here is the short answer. First it is all made with GMO corn and books have been written on the dangers of GMOs. HFCS is highly concentrated. The human body cannot break it down and process it. It triggers a neurological reaction in the brain similar to cocaine or opium because it is so concentrated which makes it addictive. It causes fatty liver disease which leads to diabetes, obesity and all the associated diseases. My husband's doctor told him when you drink a can of soda with HFCS you might as well pour acid on you nerve endings because it goes directly into your blood stream and literally burns your nerve endings. That caused Peripheral Neuropathy which is so painful it is crippling and not being mobile certainly has a long list of associated health risks as does chronic pain. If you don't believe how bad it is look at per 1980 photos and current photos, look at obesity and diabetes statics, look at the number of pharmacists and doctors offices. It is lethal.
