I really like chicken adobo but I’ve never tried it in a crockpot. I bet it’s super tender. Definitely going to try this version. Thanks for sharing!

This was awesome! Hubby loves it. I did add brown sugar and cornstarch slurry to make the sauce thicker.

Yum!! I grew up on adobo and have never tried it in the crockpot but man I think I might now! So glad you used skin on bone in chicken😆I have friends that try to make it with boneless skinless chicken and they wonder it's so bland lol! Tfs!

yes ginger. recipes from Luzon don't usually use ginger, but places down in Visayas (like Iloilo), uses chili and ginger. Also, there are so many varieties of adobo...like adobong puti (uses salt instead of soy sauce), adobong dilaw (from Taal, Batangas - they put shredded tumeric into the mix), and adobado (with cream and/or tomato paste). There are more new age adobo variants like lamb adobo (from Abe, a slightly more upscale kapampangan restaurant chain here in the Philippines - absolutely divine with bamboo rice), beef short rib adobo, chilli oxtail adobo, adobong balut, and adobo flakes. all of which are Filipino creations. South America and Spain has a ton of adobo recipes that are not even remotely like Filipino adobo.

Where TF is the adobo???? How is this a chicken adobo with ZERO adobo peppers in it??!

This is a Filipino dish and it has no chipotle peppers. Adobo means something entirely different in this dish.
