We've been out nachoed by the Aussies! But then it is Harry...and those HAD to be the best looking nachos I've ever seen. Sure beats the ballpark version with that weird liquid cheese sauce stuff. All in all that was five star gourmet!

We do long and slow Chilli con Carne (5+hrs sitting on the slow combustion stove bubbling away), leave it in the fridge for 3 days so the flavours get to know each other, then make nachos with it, but with refried beans as well as the beans in the Chilli. Gonna try cooking the meat on the fire first though for that way more intense smoke flavour!

Bro I'm drooling looks amazing. If your looking for different take. the old family fave nacho recipe: 1 onion 2 cloves of garlic 1 or 2 tbl spoons of cumin ( to taste) 2 red capsicum 1 can of kidney beans 2 cans of tomatoes Add bit of coriander Add meat if you want, but personal preference is no meat (tastes great either way) Add a bit of salt Reduce it down over a couple of hours. Might not be everyone's cuppa tea but its s delicious dish either way.

I add bacon and Mexican beans to mine. Funny when my kids were younger we went to a Mexican restaurant for dinner and they had Nachos, when they finished and the waiter came around to clean up and ask how was the Nachos. My youngest son answered my dad makes better Nachos you should get his recipe. I wish I got a picture of the look on the waiters face, it was priceless. Yours looked awesome. Sent it to my son so we might have it for dinner tonight.

Grilled flank steak makes for a fantastic nacho meat... Hit it with cumin, onion powder, paprika, salt, pepper, grill on high heat for a nice char, then squeeze some lime wedges over it. Awesome.

Was only talking about Harry and his wife over dinner tonight. There is bugger all on TV here in Australia of a Friday night so when dinner was finished my daughter snapped open KZbin and sure enough-there was Harry..Harry, your a legend mate, plus we all think your princess is a bottler😄👍 You can tell that she is still camera shy, that quirk makes her personality, Harry really is one bloody lucky guy, his misses rocks hard... I'd asked previously about cooking a southern style pork roast which is low n slow for around 10 hours but given your need and methods doesn't seem realistic. Have you considered the "turbo" method for a boston butt? I think you could pull it off on an open fire and get great pulled pork. I'll let you research "turbo" for details.
