Hey Johnny - I'm making a beef tenderloin on my Weber for Xmas day. Good to see how you do it on yours. Wish I had better grates instead of the stock Weber ones. Hello Joshua. Thanks, I really appreciate you leaving a comment. I really do love the Craycort cast iron grates. They are very high maintenance and will rust if you do not spray them with oil. I hope you Xmas turns out to be a great day! Good luck on the tenderloin. Take care.

Great video as always. 1. If you angle the thinker portion of the tenderloin towards the coals, would that help with the entire tenderloin cooking to the same doneness? 2. When did you cut the string off? Thanks Johnny

Hello Mike. I cut the twine off right before I cut into it. I used a pair of kitchen scissors. For some reason I didn’t hit the record button in that part or it would have been in the video.

I hope one day soon I can grill meat to perfect like you’ve done here! One part of the cooking process I’m not sure of and would like to ask you about is when are the charcoals ready to cook on without having to worry about dirty smoke? Seems like my grandfather would always wait to put meat on until ALL the charcoals were white and “lit” burning clean. But if your starting a few charcoals burning and doing a slow cook allowing the few charcoals to slowly start a chain reaction in catching the others in process won’t you have a lot of dirty smoke? Don’t know if you have a video showing and explaining that but that’s something I wish you could clairify for me. Thanks Johnny!

That is a good question. When starting the fire this way you are slowly igniting the coals next to the lit coals. Since this is happening slowly there is no bad smoke that is being produced. Watch my how to reach your target temperature video.

It was on about hour and half before I started the sear... but, you should go by temperature not time. Your tenderloin maybe larger or smaller which would cause it to cook longer period of time or shorter period of time. Your grill may run hotter or colder... hotter = faster cook... cooler = longer cook.

Hello. About an hour and a half. That really depends on how big your tenderloin is and how well you maintain the temp.

Merek, I built the table myself. I have a video showing how I did it. The after market grates are from Craycort. I usually recommend this Weber to folks buying a new one. amzn.to/31Enp48 Having the table makes the whole grilling experience better. Take care!

Great job! I tie my Tenderloin also. I take the tail and fold it under to even up the thickness across the entire Tenderloin. It all cooks perfectly even. Have you ever used Avacado oil? High Flash point. No flavor. Actually a Healthy Oil. Love the Channel!
