Damn they look good. Not good to watch a video about ribs when you’re hangry.😂 question for you, I have a pity boss, and have the p-string button, but can’t find out what it is and for. I noticed you said you set yours at 7, I think mine goes to 5, (I have the lexicon, small one) could you explain the o setting. Ty

Sure thing. The P Setting allows you to control your smoke a little more. The higher the P setting, the more smoked produced theoretically. It all has to do with the amount of time the fan will pause to allow the fire to smolder slightly to give more smoke. Great question and I hope I helped.

Hi hope you are doing well, as I am new too smoking meat, I have a question when wrapping your meat how do you decided when to use foil vs butcher paper?

Welcome to your new addiction. lol Honestly, butcher paper or foil is a personal preference. Foil I think makes a softer bark, but that also depends on the process of your cook. If you only have foil, no worries, use it. Try both and see which you prefer.

As Jeanne said, I use them all for sure. For me it really depends on the mood I am in and what I want to do. This is why I have so many options. But I definitely hear you on getting something that can do many things that has to be the right fit. For versatility, if you like to smoke and grill, check out the LonestarGrillz El Patron. I have a video on that unit but I DEFINITELY will be adding more content on it. For pellet cookers, the Pit Boss grills I love for the fact that they have that searing station in it. That way you can actually get some char into your cooks and grill a great steak or whatever you want.

Thanks brother. These were bought at a local meat market. I also used the Pit Boss competition pellets for this cook. Another good option that aren't as meaty as these were but are pretty meaty are beef back ribs from Costco. I actually showed them in the beginning of this video.

I don’t do tons of beef, as I’m the only one who would eat brisket or even a chuck steak. They are fat averse!! Peasants!! Haha. Stay cool during this heat wave, my brother.

I always have a resting period for sure. Usually a lot longer than an hour but I needed to wrap that video up. Brisket I usually rest at least 8 hours. Beef ribs are closer to 4-6 hours though.
