Smoked Brisket Hot and Fast with Crunchy Bark. This is a no-fuss, simple to make smoked brisket. I love a slow smoked brisket but sometimes you need to get it done quickly and this is how I like to do it.

Thanks. I still want a drum smoker really bad but had to settle for a cheap Walmart egg kamodo for now to hit that charcoal smoking itch. Will be doing a brisket this weekend and wanted more of a crispy bark than what I usually end up with so appreciate this video. Subbed.

I'm not sure if you've ever tried it or not, but my favorite seasoning for brisket is called Jess Pryles Hard Core Carnivore Black. If you haven't tried it yet you should give it a spin

Great video Mike, that’s 80% how I do any briskets is drum Hot n Fast. Was that prime or waygu, awesome marbling.

Mike, love your videos. I have been wanting to get a Meater wireless probe but many of the reviews talk about poor connectivity. You even mentioned some issues in this video. Would you recommend spending the $'s for one?

Hi, Randy. Even with the issues I would still recommend it. This is the only smoker I have that it has issues with... My Pit Boss and my offset smoker dont cause any communication issues. It reads temps accurately, no wires to deal with, and the app is easy to use.

I feel like hot and fast renders the fat a little better than low and slow but if its too fast, i feel like it doesnt get as strong a smoke flavor

Do you ever use an electric smoker? Or would you use one? Or is it just out dated using an electric?

There is nothing wrong with electric smokers. I started out with an electric smoker and eventually worked my way up to an offset.

@@WeekendWarriorBBQ that's what we started with too and recently upgraded to PitBoss Pro series 4 virtual smoker, and altho it doesn't seem to get as smokey as the electric, I think the taste is way better out of the PitBoss

Yes. With the intense heat coming from the bottom it acts as a barrier

@@WeekendWarriorBBQ makes sense. I just built one a UDS and was gonna do fat down until I boated it. Hoping the foil would protect the lean side.

You can make beef tallow out of it or use some of the fat to make sausage or ground beef
