I worked in Decatur, AL multiple times the 1990's and early 2000's and I ate at Big Bob Gibsons way too often. Sure do miss it and now I can try to replicate those memories and flavors at home here in Texas! Thanks!!!! I just made two whole smoked chickens with a pellet blend of hickory, apple, and maple and put them in this sauce right off the grill. AMAZING. I’m from Canada and never has meat like this. I blew my own mind.

We have a similar recipe up here in NY state, Cornell style bbq chicken. But you marinate the chicken in it and baste it while it's cooking, can't dip it afterwards because there is raw egg in it (I use a little mayo instead, it sticks better). Best results are on an open pit. Every firehouse and church bbq in the summertime uses the same recipe. Chicken, baked beans, salt potatoes, and a soft roll with a pat of butter. It's sublime.

Just made this for Mother's Day yesterday. Do not hesitate to make this, folks! It was really good. The chicken was awesome with just the Holy Cow. But, the addition of the white sauce and the creamy, peppery, and vinegary tasting notes pushed it over the top. I would definitely make it again. One more thing, I only made a 1/4 quantity of the sauce for the bird. It was plenty for just one chicken. Not everyone in my house wanted the sauce, so we served it on the side.

Cooked a slightly altered version of this tonight turned out great. Only swapped out the rub used for a local one in the sauce because I didn't have it on hand. Other than that followed it pretty close. It turned out great. First time using an Alabama white sauce. Very good.

We either Baste with our white sauce or Have it in a pot on low heat to Baptize dos Yard Birds ...the heat tones down the vinegar twang a bit gives sauce a very unique flavor profile. The Yum factor!

I made smoked chicken sandwiches dunked in a version of alabama white sauce. Had a friend come over who absolutely hates mayo, even the thought of it. Made it beforehand, so he had no idea. He devoured it and complimented that it was the best chicken sandwich he ever had. Goes to show you, don't dissect things and judge before you try folks! It really is that good.

I may have missed what smoke wood you used on the chicken.. That aside, one of the best chickens I ever cooked was used with maple. You don't hear of many people using maple but I think it's great for pork/chicken.

I did 2 chickens yesterday I took some mayo mixed it with your gospel rub and holy cow rub to make s season compound lathered it on the chicken and oh boy were they good golden crispy skinned and juicy works with butter to but I prefer mayo on chickens and turkeys might be a newyork thing idk even steaks get a light mayo coat before the grill

Matt your Alabama white sauce recipe is almost the same as mine. I use white vinegar and apple juice instead of apple cider vinegar. I also add cayenne pepper. I make this sauce everytime I smoke chicken or pulled pork.
