Ingredients:
• 6lb pork belly
• Heath Riles BBQ Competition BBQ Rub
• Heath Riles BBQ Garlic Jalapeño Rub
• Heath Riles BBQ Sweet BBQ Sauce
• Checkered Pig Competition Sauce
• 6 tbsp of butter
• French's Yellow Mustard
• 3/4 cup of brown sugar
Directions:
1. Get your grill to 300º.
2. Slice your pork belly into cubes.
3. Coat with mustard, season with Heath Riles BBQ Garlic Jalapeño and Competition BBQ Rubs, and toss.
4. Place pork belly cubes fat side up on a greased wire cooking rack.
5. Place pork belly on your grill. Put a disposable pan underneath to catch all drippings.
6. Smoke your pork belly for an hour and a half.
7. Take off grill and place pork belly in an aluminum pan.
8. Toss pork belly in brown sugar, Heath Riles BBQ Sweet BBQ Sauce, and Checkered Pig Competition Sauce. Place butter on top and dust on Heath Riles BBQ Competition BBQ Sauce.
9. Place foil on your pan and place back on grill for another hour and a half to 2 hours, or until probe tender.
10. Take off grill, let cool, and enjoy.

Great cook Heath. Your camera presence has always been great but you are taking it to another level. I picked up some more of your rubs and sauces fron Kroger in Southaven yesterday. Just a question..where should i purchase them from to allow you to maximize the profits? Kroger? A website? Just curious which benefits you the most. Keep smokin.

Heath, I just bought pork belly today and searched to see if you have a recipe (because I trust your recipes). This one looks like a winner but right near the end you say, “Perfect! But they are hot. I’m not going to lie, they’re hot.” Did you mean that they’re spicy hot or temperature hot? I’m guessing that you mean spicy hot (Jalapeño rub). If so, what rub would you use to make them not so spicy hot?

It was temperature hot. I should've let them cool down a little longer before eating. The Garlic Jalapeño isn't spicy unless you layer it on heavy. Just give a light to medium coat.
