Today we are making a smoked venison roast on the Pit Barrel Cooker. We will start by brining the venison roast to keep it moist during the smoking process, then smoke it on the Pit Barrel Cooker. While the venison is smoking, we will make a red wine-chocolate sauce and then sear the venison for a nice crust.

Absolutely beautiful venison bro. Cooked perfectly. Venison is one meat I haven't cooked but have eaten. The PBC will never let you down.

Good looking Venison Roast. I don't know the desired temp for Venison, but this one looked for me. Good advice about the rubs and sliver skin.The chocolate wine sauce had to yummy. Glad you got a chance to fullfil a dream. Nicely Done. Thanks for sharing. 😎.

I bet you grew up watching the Wildcats replays at 11:30 on one of the Huntington or Charleston TV stations like I did Jeff! It really is amazing how tender and lean venison is. Never had it on the PBC but this sounds delicious!!

Thanks Rob. We only lived about 30 to 40 miles from Lexington, so it was a local station. I want to take my son back to Kentucky this fall and let him get a deer at my Dad's place.

Have you got a recipe for the brine please? I can’t find a recipe for the sauce or instruction for smoking the venison - do you have anything written down? I looked through the Armadillo pepper website but didn’t find anything there... loved your video!!

Hey Jeff, I live in Louisville KY and I was always under the impression you could not purchase wild game and if so where? Also, where does one purchase "Big Ass Duck Fat" and last but not least can I use an electric Masterbuilt instead of a PB because that's what I have to work with?

Hey Patrick, I grew up in Owen County and used to harvest my own deer. By the way, I have relatives in Louisville and have been to the Derby a couple of times. It is a huge ass party at my house every year. My grandpa loved horses. Anyway, I bought this from a butcher here in Jacksonville. He imports it from New Zealand. My brother lives in KY and he is a huge Cardinal fan, but I'm a Cat fan! You can get the duck fat on Amazon. Thanks brother for watching our channel.

This may sound odd, but my wife and i are not thinking rare to medium rare sounds good, but i also know it is lean meat. Can we cook it long enough to make it more medium well before it dries out?

Hey Bryce, I would tell you that medium well for beef or venison is too dry. With that said, my Grandma ate her Prime Rib well done and she loved it that way.

@@Armadillopepper I actually just bought a rotisserie for my Weber kettle, and it says it will handle twenty pounds. I think I'll have to test it after a couple trial runs on smaller stuff.

You said in your opinion it doesn't go with sweet but then said you were making a wine a chocolate sauce and chocolate is sweet as are wines...

Hi Shade, Cabarnet is not sweet and high cocoa content dark chocolate is not sweet. That is why I specifically chose both of those. If you used a Reisling or milk chocolate then it definitely would be sweet. Go buy some over 70% dark chocolate and see for yourself 😁

Yes Monte. We have an older smoked duck video on our channel that we did in the Masterbuilt. We've not done a duck video in a few years, but it sounds like a challenge 😁.
