Dude you have never steered me wrong. I'm 47 and live out in the country in Arkansas. We NEVER ate St Louis style. We always ate cartilage and all. Truth right there, trim them yourself, when I lived in Washington state they sold one sparerib cut down the middle as two St Louis cut ribs, what a joke. We waste nothing, season those trimmings, smoke them up, add meaty parts to your beans and such, bony parts get boiled down to smoked pork stock for slow cooker sauce for a boston butt for when you don’t have time to fire up the smoker.

This one BBQ place near where I used to live cooked up the full spare ribs as is with minimal trimming, then after cooking them trimmed them down to St. Louis style and sold them that way. Then they separately sold the rib tips too. The rib tips were my favorite thing at that restaurant. They were awesome. Just another idea to throw out there.

I need to find a better grocery store. At my HEB the St. Louis pork spareribs are 6.17 a lb and the spareribs are 5.14 a lb. Still save over a buck a lb but still feel like I am overpaying compared to you.

I make killer smoked ribs so this is a great tip! Did you post a video on what to do with the trimmings? Also, how long will pork ribs keep in the fridge before you have to cook them. I mean, how long do I have before I have to rub and throw them on the grill? I'd like to butcher them in advance of the 4th.

Rib tips. Get you a pot of lima beans, them big old white kind, chop up some of that pork and braise it in a skillet then cook it slow with them beans, with some onions, salt, black pepper, and garlic. That's all you need for a good pot of lima beans.
