I started making my greens like this about 5 years ago and now my family looks forward to them during the holidays. I actually make greens at least 1 a week. It's a perfect food for bodybuilding.

Hey, AB! I just wanted you to know I made collard greens for Thanksgiving with your recipe and they were the best greens I have ever made! As a matter of fact I have struggled with greens for years and had somewhat of a inferiority complex about them. But with your recipe, no longer do I feel my greens are inferior! They were delicious! My mom and grandmother taught me how to throw down in the kitchen like this. You did a great job, you can cook for me anytime. I have watched several of your videos and you know your way around the kitchen for sure. That smoked turkey leg changes the game for those who don't know.

Hey AB, Just wanted to thank you for producing such a worthwhile and educational show. I've recently moved aboard a small trawler to live out the rest of my life. I have found your crock pot recipes to not only be delicious but after watching the videos easy too! Thanks. I do not have an oven, something I'm hoping to change some day. For now, I cook with a stove top, microwave and crock pot only. Thanks to you I'm eating like a king. I can't tell you how much I appreciate what you do for us stuggling cooks. Looking forward to more great recipes and having an oven one day!

Awesome! I love cooking collard greens. Cooked them for the first time last Christmas following my mom directions and they were delicious! I cooked them just like you except different seasonings. THANK YOU for cooking your greens for more than 30 mins! These videos that say cook the greens for 30 to 45 mins make me shake my head nooooo! Love ❤️ all your videos!!

Actually you can eat those roots if you cook 🍳 em soft enough- but they're good without too. All you need is some pan cornbread.

I agree, them stems have bountiful flavor and they are loaded with concentrated nutrients. It’s the nectar of “pot liquor” … but to each their own🤷🏾‍♀️🥬🥬🥬🥬

I'm from Georgia and that looks delicious but my grandmother always used ham hocks in her greens and left the stems on just like her grandmother taught her. Me and my wife still prepare them that way and use a little more vinegar then you did and we cook them until the stems are slightly tender so its a good contrast in texture. that turkey leg looked good though I may try that next time.. We are fortunate to have written down recipes from as far back as 5 generations back of my family. I hope one day to have a cookbook made. When the woman of the family (my wife and daughter, mom and my sisters, aunts, cousins, nieces all get together the day before Thanksgiving every year at our family home (its a southern thing to keep the generational family home everyone grew up in , in the family up and maintained even if nobody is living in it for holidays and family gatherings). You ought to smell and taste what comes out of that kitchen. No wonder so many of us guys are fat lol. Maybe I need to start a KZbin channel to show it all lol

Great recipe ! I started making Collard greens in my pressure cooker about 6 weeks ago. 25-30 minutes @10 lbs. pressure & they are done ! Been using Pork neck bones that I smoke myself. You can also chop up the stems & they cook down nice & tender. Good stuff.

@@UnpopularOpinionByNkiruka I cut them up into bite sized pieces & also chopped the stems into 1/4"-3/8" long pieces. Seasoned the chicken broth (about 20 oz.) w/ vinegar (4 Tbsp.),garlic (2 chopped cloves), & sugar(about 4-5 Tbsp). I also rough chopped a medium sized onion.I put in about 6-8 pieces of smoked pork neck bones. I have also done 4 smoked chicken legs before. I smoke all of my meat. Put the greens in when the water is at a rolling boil & then put the lid on& cook for 25-30 minutes@ 10 lbs. , after it comes up to pressure. You can cook it for about 7-8 minutes less time if you don't use the stems. The only problem I have had is that the neck bones cook down & fall apart & you will have to pull out as many bones as you can before serving. The vinegar & sugar measurements are all done to my taste.Start out on the low side,you can always add more of something if you want to. I do not add salt because of the smoked meat. The neck bones give it a better flavor but the chicken legs are easier to deal w/ the bone issue. The nice thing about this,is its speed. You can start out with a 15 -18 minute cook time. If you want them softer,put them back on the heat. The texture is totally whatever you want. The stems cook down really good w/ at least a 20 minute cook time. I also have added beet greens & Swiss chard to the pot, but just know, that they get pretty soft. Hope this helps.

@@UnpopularOpinionByNkiruka I cook my smoked meat in the pressure cooker. Cuts the cooking time down to minutes. I wash my meat, then place in the pressure cooker with just enough water to cover the meat and add my seasonings. Cook for about 20-25 minutes. Ham hocks take a little longer. You can add your greens with the meat but I just dump everything into a large pot & cook them down. They don't take long to cook until tender. Some people cook them until they are mushy. Yuck! I hope I helped you out. It make take a couple of tries before it's perfect for you.

Growing up we only used smoked ham hocks to cook greens but we've transitioned to smoked turkey and it has great flavor. I prefer smoked pork shank but good ones can be hard to find in Vegas. You've simplified this recipe for sure and like you say' "It's Fire"

It's great that a lot of people can see pork does not always have to be used. I've ben eating collard greens and smoked turkey with corn patties or corn muffins since I was a kid and I am 54.

Mama didn't "roll and cut", she "pulled and tore." Also, she boiled the meat first before adding the greens. This allows for better focus on the complete separation of the meat from the skin and bone. In the case of a turkey drum, pre-cooking without the greens better facilitates removal of the many shards of supporting bones, webbed in the meat. What you're left with to add the greens to, is a rich pot full of liquor and succulent, well seasoned, all edible meat. Can see her now as she was in the 50s and 60s, working her kitchen magic, with the ever present love and faith that she kept us with. One day I'll see her again, and get to thank her once more for how well she prepared me and my siblings for life in this world...then we gon' cook a pot of greens, and a skillet of cornbread! 😥 ✝️

Thank you so much. I have never liked collard greens personally, but really wanted to learn to fix them. I have always loved allllll of your recipes and will definitely try this one. I appreciate you making cooking simple for those of us who didn’t grow up in the kitchen. Your channel is definitely one of my favorites. Collard greens (or any greens) always take me back. My grandfather would grow them and bring them into the kitchen, my grandmother would clean them and cook them. This is exactly how she would do it. If I have any leftover, which I never really do, the next morning I put it on polenta or grits and top it with a poached egg.

I grew up on these. The only thing missing is some skillet cornbread. Momma never used the chicken broth just the meat, onions, salt and red pepper. Then add the hot pepper vinegar when its in the bowl. the pot liquor is just as good as the greens especially on a cold winter day ...i have to get consent from the wife to cook them these days due to the smell she doesnt care for. Cant wait for winter now AB. Great Job as usual
