I’m with you on living alone and have recently started freezing my left overs but never have the greens. Some were getting wasted. It’s good to hear I can freeze them also and still be good. Guess I thought they would never hold up after being cooked. Thanks for the tip. 😊

My family roots are from Southern Maryland in Charles County in LaPlata and my grandmother greens had Collards, Kale, Turnip, Rape and Mustard greens with neck bones and ham hocks 🔥🔥 and my family either used vinegar or Tabasco sauce

Your recipe is Spot on ! A pressure cooker will cook those greens in about 18 minutes @ 10 lbs. pressure. I also save & chop all the stems. Michigan guy here that loves collards & grows them in my garden every year. They also do very well w/ Swiss Chard.

In our part of the world (Newfoundland, eastern Canada) we use salted beef to provide the flavor for our cooked vegetables, turnip greens and cabbage. Greens with veggies, mashed potatoes, whatever meat you like and gravy? Living large! Cheers!

AB!!! O.M.G!!! The greens were FABULOUS! Took them to our church pot bless today and they were GONE!!! No leftovers. Not even the juice, sir!!! This is my go-to recipe. Using the meat water and the layering you do with garlic and onions and seasonings is spot on. There were several people at our church that have never had collard greens before and they LOVED 'EM!!! Lookin good, AB. I always add a lil apple cider vinegar to my greens and it gives it the best taste. Also, if anyone ever encounter tough greens or they take too long to cook, lightly sprinkle a tad bit of baking soda in the greens. That fixes it. Your greens will be so nice and tender. Don’t sprinkle too much though or you will have spinach greens.

Never had them w/ sausage. Will try it! That’s a meal! My mother use to have a “Greasy Spoon Restaurant before I came along” Her claim to fame was that “Cab Calloway” used to love her food!” I learned how to cook from her.!!One thing she did with greens is that she made “Steamed Cornbread Dumplings“ cooked on top of the greens. (She used the pot liquor from the greens mixed w/cornmeal, flour & baking soda & a pinch of salt) to make the dumplings! I never got the exact recipe (I was just a teen when she passed) but I’m sure you could figure it out! That’s some good eattin’!
