Mr. AB, I'm an old school cook, much like yourself, but there is always something new to learn. I'm the oldest of 5 girls and my grandmother taught me how to cook at an early age. I like mine sweet! My pro tip...I add butter to the skillet while it's warming the pan in the oven. Nothing like pouring the batter into a hot skillet of melted butter. Makes for some very crispy sides.

Hi AB, Im in Australia and just bought a cast Iron Skillet so this is the first recipe I'm making in it. The printable recipe was great and my amateur tip is 3/4 cup of butter is 150grams. I also followed your how to season a skillet video. I love your channel mate! Keep up the great work. Peace.

Sometimes I make jalapeno and cheddar cheese cornbread when I make a batch of chili...I'll definitely try preheating the cast iron first. Love those crispy edges!

Looks beautiful! For cornbread dressing, I prefer NO sugar. For a stand-alone, I like a little bit of sugar.

Love your recipes I prefer my cornbread without sugar only time I make it is for chili beans and pinto beans, I do the same thing with the hot cast iron pan but I melt crisco instead of butter the same with my biscuits!😋

I am new to your channel and I must say I LOVE how you demonstrate these recipies. I cannot wait to try these. I do not love to cook but I do enjoy cooking with recipies. I just made this cornbread tonight. It's delicious! I made it using buttermilk because I had plenty and no regular milk. And I didn't add any sugar because I'm going to use it for my cornbread dressing. Y'all, I kept on pinching off that cornbread eating it every time I passed the kitchen. I can't wait to see how yummy it's going to be when I add a little sugar for stand alone cornbread. 😋

I put a stick of butter in the bottom of the pan when I put it in the oven. It fries the batter as you pour it into the pan. Sizzle. Sizzle. Extra crispy.

I also love me some crackling cornbread and not much sugar. I only add a teaspoonful bc I don’t like sweet cornbread. And for dressing, no sugar is needed bc I don’t want sweet dressing.

Sorry if someone already mentioned this, but instead of putting butter in the bottom of the skillet, I like to use an equal amount of bacon grease. Takes it to the next level, especially if you are going to use it for the dressing!

Hi AB I grew up on Cornbread not sweet Cornbread but we do use about 1/4 cup of sugar only to 2 cups cornmeal and 1 cup Flour 3 eggs 1/3 cup vegetable oil in the mix too and very many of the good ole southern cooks back in the day usually used Buttermilk instead of regular Milk we make the old fashioned recipe using the Buttermilk also when using buttermilk you have to add about 1/2 teaspoon of baking soda to the mix too, there’s a reason for that when using Buttermilk we heat up a little oil in a cast iron skillet get it hot before pouring the batter in skillet it make a nice crust too youre recipe looks yummy too😊👍

I use stone ground cornmeal from the fall county fair here in my part of Texas. I also heat my cast iron on the stove with a small amount of oil, then sprinkle cornmeal in it until it sizzles, then I pour in my cornbread mixture with a sizzle too...... Love me some cornbread!!!! Great video!!!!

@@deebaby4834 The Corn Meal Mix by Pearl Milling company will make it easy for you. All you have to do is add vegetable shortening or oil, sugar(optional), milk and an egg ( measurements on the back). Believe me it taste just like homemade cornbread.

A little sugar not gonna hurt, it brings out the flavor of salt or butter in the stand-alone. My mom can't stand the sugar for dressing but a nice Tablespoon depending on how much you're mixing, wakes all the flavors of the other ingredients. Trust ✌🏽

I agree with your mom. I don't want my dressing to be sweet-tasting. Adding cranberry sauce is sweet enough. We should be using less sugar as possible in some of our recipes that really don't need it. This is why so many people are sick. The overuse of sugar is killing us.

@GiGi-wm9ec Ok I get what you're saying. I don't like sweet dressing Periodt but I use "a lot" of spices like garlic and onion, soul seasoning, etc. and perhaps 1 lil Tbs of sugar won't be over-powering, it might just kind of kiss the mix somewhat. I 'm gonna try it!

I love my simple buttermilk cornbread made in my dedicated for cornbread only cast iron skillet. I grease my pan with shortening and my recipe is simple...2 cups cornmeal, 2 cups buttermilk about ¼ cup veggie oil and an egg!

I grew up eating both. My mom made sweet cornbread. So sweet and moist it was almost like cake. That goes great with any kind of beans. I hate beans, but with her cornbread, any "struggle dish" was 5 star lol. My dad made buttery cornbread. Best cornbread ive ever had in my life. I generally perfer sweet cornbread because unsweet is usually dry and unflavorful to me. Idk how he did it, i cant even replicate it myself. But his was the best hands down. Since hes no longer here, i settle for sweet cornbread. However when it comes to dressing, no sweet cornbread. That is what cranberry sauce is for lol

I was taught to mix all dry ingredients in a separate bowl from the wet ingredients. I put the eggs in the bowl first in case any egg shells accidentally fall in because it’s easier to fish the pieces out with just eggs in the bowl. Then, add the rest of the wet ingredients. Then mix everything in a bowl the appropriate size for the amount being mixed up

This is how I make my cornbread on a smaller scale. Yes cast iron skillet and all. I skip the sugar if I plan to use it for dressing. Do you pan fry into patties sometimes? Would love to see this method. My aunt use to make them when I was a kid with the crispy edges…so good! I miss her and her cooking.

Hey AB, I'm from Greenville MS, My mom was one of those country girls. Make your cornbread with Butter Milk Bro, OMG So good, just use Butter Milk instead of regular Milk, and we love it SWEET

My late mom and I made ours w/o sugar . I may just add a little this time! Would you recommend substituting buttermilk for milk? I did it before and liked it. Thx!

For greens, I like the cornbread a little sweet. For beans & rice, I like it really sweet. For dressing, not sweet.

@@22diva76​​⁠Have you all even made this dressing? Cause if you did, you’d know that it isn’t anywhere near sweet. 3/4 cup of sugar can’t overpower the various ingredients used to make dressing. And you add the sugar in the cornbread, not the dressing mix.

I use basically the same dry ingredients, melted butter, eggs, and substitute buttermilk in place of whole milk. Also, a quarter teaspoon of vanilla extract brightens up the taste without adding a cake or cookie-like essence, that overpowers the cornbread-like quality. It was my mother's recipe, (Instead of butter, she used bacon grease collected in a Crisco can, sequestered on the back of her stove) that I've embellished over the decades. She's since gone home to live with God. I can still feel the love every time I remove a hot cast iron full from the oven. ✝️🙏🏽🕊❤
