Tip, if your fritters are not cooked on the inside and browning too fast on the outside, just put them in the oven for 15 mins. Depending on the type of flour and humidity, some flour is more dense than others. I always get that raw dough effect in the rainy season here.

the whitebait one is also one of North Vietnamese food, but we marinate it with fish sauce, garlic and chili pepper, then fry till it crunchy. If you have chance to buy fish sauce from some of the region in Vietnam, not factory made but made by people in that region, even better if you can take the smell.

Same here! Some steps (like sift) I would just skip because I didn't know why they were done and it seemed like extra work for no actual difference. But knowing why to sift or cut things a certain way makes me want to do them.

In Indonesia we called Corn fritters "Bakwan Jagung", but we don't use milk, just regular water. Usually we dip it in chili sauce or eat it with raw chili.
