Poor Man’s Soup
1 Tablespoon olive oil
1 large onion, chopped
3 cloves garlic, minced
2 pounds ground beef
8 cups beef broth
14.5 ounces diced tomatoes with juice
29 ounce can tomato sauce
2 Tablespoons sugar
2 teaspoons dried basil
2 teaspoons dried oregano
15 ounce bag frozen mixed vegetables
2 cups uncooked macaroni (or some pasta)
salt and pepper, optional and to taste
cheddar cheese, for topping
Place olive oil in Dutch oven or stock pot and sauté the onions. Add the garlic and sauté for about 1 minute. Add the ground beef. Cook until beef is brown. Drain the grease off the beef.
Add the beef broth, diced tomatoes with the juice, tomato sauce, sugar, dried basil, oregano, mixed vegetables, and macaroni. Bring to a boil and cook just until the macaroni is tender.
Add salt and pepper to taste.
Top each bowlful with cheese, if desired, as a topping.

Wow, that is a walk down memory lane. Every Saturday, my mother would make a soup like that but she used stew meat. Summer winter did not matter this was what we had. We were always outside playing. The storm sirens were always tested every Saturday at noon. When that siren sounded we knew the soup was ready. And I sure did look forward to that soup every Saturday. Thank you.

This is the first dinner that my autistic daughter learned to make. Now, I'm trying to add cornbread witch she doesn't like changes even to meals🤪😜 have to love her❤❤❤🙏🙏🙏😉🐾

My kids didn’t like cornbread either. on jiffy package I had a recipe for Johnny cake. So I told him I was making Johnny cake and they ate it. Lol

Make this at least once or twice a month. Always delicious regardless of type of vegetables added. Sometimes if I don’t have tomato sauce I use a large can of V8 or tomato juice. Yum

Yummy! Your soup looks delicious... we've had ham and bean soup this past week... and yesterday I made creamy potato soup... this will be my next soup to make! Enjoy the warm weather! You can change the tomato sauce for beef or chicken stock.??😊just saying? 😊

If you want it more brothy cook your pasta separately and add it after it’s cooked. Also the spices you added it - try rubbing them between your hands when adding them and you won’t have the spices floating on top. It’s something my mother always did.

I recognize this as Hamburger Soup. I got the recipe in 1970 out of my Betty Crocker cookbook. My nubby loved it...that was 54 years ago. We still love the soup...and each other. 😂 I enjoy your channel and have made lots of your recipes. Thank you both. ❤❤❤ Blessings.

My mouth is watering, can smell and taste this through the phone lol! Love the left handed Tom I am also. I used to drive my mom nuts when I would cut stuff up, she would say your gonna cut yourself cause your doing everything backwards. It would make her so nervous lol. God rest her soul. Snowbirds…. Thyme and Basil would be awesome in that soup. Even little touch rosemary I might even think about putting a small Bayleaf in there. I believe in herbs and they’re so good for you and keep you from getting sick.

Sometimes a group of us would get together and make a version of this, everyone bringing whatever they could, and we called it Stone Soup Gathering.... always liked the stone soup story as a kid. When I brought this personal little tradition with me to live in a new state I was rather surprised to realize that not everyone was familiar with that story

Just read this story to my grandkids and we allowed them to each choose their favorite ingredient (there were 6 ingredients) that soup was sooo good the kids loved it.

I put my onions in with the burger when I cook and the recipe calls for both, it saves on steps lol. It's been so cold here and I made Beef veggie soup yesterday.

When I was first married, I made this Poor Man's soup with chopped up hot dogs instead of hamburger. I had to do what I could to stretch my husband's Air Force pay. He loved the soup.

Just watched you making Poor Man's Soup. It Iooked delicious. I have made it once and loved it. I went exactly by your recipe and it turned out great.. I have been watching you & Melissa for awhile now, and really enjoy your "Cooking Show". It's so nice to be able to have the recipe as you watch it being made. My sister bought me your Cook Book and I love looking thru that at the different recipes. Several reminded of how I learned to cook from our Mother. She taught all 6 of us girls to cook thru the years. I may try the Chocolate Pie with Meringue tomorrow. Keep up all the good cooking. One of my sister's thought your LASANGA was the best I'd ever made. Made just exactly by your recipe.

Mom used to make this all the time. I’m from southern Illinois and always had a huge garden. Therefore every vegetable came from there. Oh and by the way me and Charlie are both left handed. No other way to be😊. We are all born right handed only the most intelligent and artistic ones over come it. 🤣

We call that particular viscosity a "stewp or stoup".... not as thin a broth as soup and yet not as thick as a traditional stew/chili. No matter what you call it... Yum Yum Yummy in the Tummy works too💯💥💥💥😋😋😋💫👏🏽👏🏽👏🏽

You’re such easy, enjoyable folks to visit. This soup is a variation on one familiar by many names; the most memorable name I’ve heard it called was by the inimitable Phyllis Diller on Johnny Carson’s show: He asked what kinds of things she cooked and she proceeded to describe “Garbage Soup.” On Fridays she cleared out the fridge as her soup base. I loved her. I love soup and this video. I love you guys. Thank you.

I am enjoying this souper bowl series. A former co-worker shared a similar recipe, she called it “Wash Day Soup”. One big difference is instead of the canned tomatoes she put in similar amount of chunky salsa ( what ever temperature level you like). This is definitely an easy but tasty soup. Love hamburger soup! We use potatoes instead of pasta and V-8 instead of tomato sauce and beef broth. I make a big pot and we enjoy it for a few days! 😋❤️

We like to add cut up fresh cabbage in our Vegetable Beef Soup. It's really inexpensive and my husband's grandmother (a West Virginia native) always added it to her soup!

I live alone and I have a similar recipe that I occasionally make. I freeze containers of it and it lasts me for quite a long time. I do not put any pasta in when I freeze. When I decide to have some, I try different kinds of pasta and even barley and I cook it separately, adding as much (or as little) as I want. And some nights I don't put anything in it at all. The containers I use allow for 2 or 3 servings so if I am using pasta, I make enough and keep it in the refrigerator in a separate container (with a little olive oil on it) and add it when I am having the soup the second night. I'm in Punta Gotta and the weather is supposed to improve on Tuesday. So happy you made it here safely. Wondering if there is any Chex mix left! It sure looked good! Please enjoy your time down here. If you're wondering what is causing the cooler weather, the weather people are blaming El Nino. That the normal pattern stays to the north of us and El Nino is pushing it further south! We call this Uncle Toby's Slop, as that it what Aunt Tootie called it 😁. He loved it - she didn't - so he made it himself. He used every kind of canned veg in the cupboard, plus leftovers, plus he would add fresh carrots, rutabaga and parsnips. He used all the liquid from cans (if used) as well as water with bouillon. Hamburger cooked with onion, garlic, green peppers. I just made it Friday and have one more serving left for lunch today 😁. It is'nt necessarily the same each time. Makes it an adventure. Oh...nowadays I also add some Dried soup seasonings from Amish stores.

Guess I’m watching an old video, but it’s definitely soup weather in Michigan. A friend of mine would call it “musgo” soup. Because everything in the fridge must go. Loved the name she had for it.

We called it a goulash, my dad was the cook when it came to goulash along with his being Ukrainian, along with 8 kids loll we had 3 freezers, mom was from France and was a French cook. We had a taste of two cultures hers & his. This soup is what we called one of dads Goulashes cuz we had no name for it,, AND .....Tt was NEVER the Same Anyways.?? He lived thru the Great Depression at 18 yrs old it was rough, he told us all about it too. He made a lot of goulashes and fricassees I tell ya. lollll . We grew up on this soup, except instead of the spices you used we used chili powder because we grew up in southern Oklahoma which is very much like north Texas, where we now live! Ha! I would really like your version too, but my husband definitely prefers chili powder. I never heard it called Poor Man’s Soup, though! It was just Vegetable Beef Soup to us. Whatever you call it, on a cold, stormy night there’s nothing better than a big bowl of it with a nice wedge of cornbread! Looking forward to your next soup! Thanks!

Tom, I don't fry my hamburger. I boil mine. Then, I run my cooked meat and the meat juice thru a strainer. I put both bowls in the fridge overnight. The next morning, the fat has come to the top of the broth. I save the fat for other things that I might cook. This way, my family does not eat fat. Try it...I think you might like how I do this. I do this for everything... spaghetti, tacos, chili, etc.

Thanks for sharing another great recipe. I think most people would enjoy some variation of this soup, great way to use up leftovers. I grew up in a large family and my mom made this often in the winter. She had a big pressure canner that she made it in. She would combine all of the last bits from the garden, and canned it for what she called soup mix. I hope you enjoy your time at the beach. God bless you.

I used to make versions of this often when my kids were still living at home. Always a favorite! The lighting in that kitchen makes for a great quality video - easier to see.

Well I’ve had my eyes on the recipe for a few months now and I have been waiting for “cooler” weather 😊. but I just had to make this in the middle of SoCal fall (you know mid 80’s). Anyway turned out absolutely amazing. Dunked some rye bread in it and I’m officially in a good food coma. Thank you so much. Love your recipes and keep up the great work!!

I make this but I add a TON of sliced bell peppers - all colours - and use long grain rice instead of pasta. In my house it’s called “Stuffed Pepper Soup,” and it’s my favourite soup recipe ever. Second place goes to “Ham and Split Pea Soup.” I love just about all soup! My Dad did, too; and I know that’s his influence coming through even after all these many years.

It's just hard to beat a soup meal in our opinion. It pairs well with cornbread, breadsticks, sandwiches, etc. Your addition of the colorful peppers sounds very nice, too!

Have made this 4 years I have tweaked the recipe over the years. The Kids come out of the Wood work to eat at my house. Mom's cooking here. They come. Around the table and warm the heart. My Uncle taught me this recipe. He called it hobo, Soup. Everybody brought what they had normally No meat couple times a rock. Are so he said memories. He was 96 when he died. He taught me this when I was 11 long time ago.

Yummy yummy yummy. I think this soup is in my very near future. We are still snowed in up in this Kentucky hollar, so this recipe is a great way to shake off the cold. Glad you guys all made it there safely. Enjoy your time with one another making new memories with friends.

I remember my mother in law making "Hang over soup" this kinda sounds like.. I think she used can of corn, beans and or peas, then ground beef and boiled the water then dumped everything form the cans she had on hand into the big kettle then broke up and dump little bits of ground beef or hamburger she ripped up... When the meat was fully cook time to dish it up.... It was best the next day chilling in the fridge over night, then again to me left overs always taste the best as I think it comes from the home cooking with out needing to cook.. LOL.. (edit add) I am a bit iffy on what all she put in there as that was 20 years ago and only was married for a few years, so seen her make it a few times..

How did the road snacks make out? Tips: Instead of pouring all the broth into your pot at one time, use some in the empty tomato cans and swirl, then pour into your soup. Also, I believe if you're going to use fresh basil and oregano, or any fresh herbs for that matter, you'll need to double the amount of dried herbs that are called for. As far as small, medium, or large onions... What about weighing or using a measuring cup? There's a few more tips I could add but I've been enjoying this kind of soup my entire life. I use the unsalted broths anytime a recipe calls for broth. My mom and her mom and grandma Neusch made this but they called it hamburger soup they used canned vegetables witch gave it a good taste of the vegetables they put in it thank you for good memories of 3 generations of making it great grandma Neusch was born in the depression time they didn't put pasta in theirs no sugar or spices salt and pepper is what they put

Great idea on the damp towel! I’ve always been taught to use all that onion don’t leave none of it out. Just chop up the rest of it the best you can and throw it in the pot. You never can get enough onion as far as I’ve got that’s a natural antiseptic and it’s super good for you, lotta good medical properties to onions and garlic.

I just call this vegetable soup and the last few years I have been canning it in the summer from my garden veggies(carrots, tomatoes, green beans, celery, potatoes, onions and corn). When I go to cook it, I fry up some ground beef and then add the quart or two of soup and some frozen peas. Cook for a while and it’s done, so easy! I don’t add pasta to mine, though.

You are fortunate to get out of this horrible weather here in Kentucky. I live in Taylorsville and when I got up at 7:00 this morning it was -2 degrees with a wind chill of -15 and 3 inches of snow on the ground. Hope the sand feels good between your toes😊
