As someone who played PE at that time, it was actually the fly button - you swiped up on it to fly up, swiped down on it to fly down, and double-tapped it to stop flying. When you weren't flying, the jump button was just a full diamond in the center of the button.

The foot makes most logical sense here to me. All buttons, abstractly speaking, represent what will happen if you press it (forward button makes you go forward and hence has a forward arrow on it). The jump button's default state, a filled rhombus, is probably an arrow pointing up at the viewer, to indicate up, and the sneak button is probably a down arrow. Consequently, when you enter flight mode, the button's only use is to switch to ground mode, the on-foot one, and so it shouldn't be a wing or a cape or anything like that since that's not what that action is.

By the way, the textures shifting one pixel has been a bug on Minecraft Bedrock for ages now, like before 2020. It only happens on Android x86 builds though. So if you're playing Minecraft on an Android Emulator, MCPELauncher on Mac/Linux, or an ASUS Zenfone 2 you'll get this weird bug. P.S.: you used to not be able to craft until recently

As someone who's started out with PE/bedrock and then switched to java, I relate. I didn't play pe on my tablet a lot, but when I did I'd always see those controls. I never ended up using sneak ever, only using it in bedrock edition on my pc because it was easier. PE & bedrock are so buggy to the point of insanity and it's kinda sad to see minecraft not really caring about it. They say they care for their community and yet they barely fix the many issues that players have with the game. The only sense of change is java, but even then there's still issues, like the copper bulb controversy. All in all: PE/Bedrock is silly and I still love it, but Java is definitely much better lol.

It’s a wing and it’s supposed to be a single angel sort of wing. If you take the wing and duplicate it then flip it across the y-axis and then attach the two wings to a vaguely person-like shape it becomes more apparent.

PHOENIX!! I have a favour to ask. In the Minecraft Feedback discord, under the “controls” post channel, there is a post (top post) that asks Mojang to revert the new mobile control changes made in version 1.20.70. Please help us mobile players by letting Mojang know that we absolutely hate these changes. They spaced out the buttons way to much, making it much harder to strafe at all on a version where strafing is already hard 😭. This a lot to ask, but a lot of people would really appreciate it if this topic was given some attention (mobile players have no voice 😔) Thank you.

Definitely agree, I tried to report my issues with the changes on Mojang’s feedback website but I needed a Microsoft account to do so, meaning I am unable to give this view. It's a boot. The solid color at the bottom left is the ankle, the lines are because of the treads of the boot. They used that because when you double-tap it you go back to walking.
