Hi, just chanced upon your chiffon cake baking tutorials and love the tall cakes your recipes produced. Questions - I noticed you used water tray when pre-heating the oven at this recipe but not at the Coffee Chiffon one. Is there a reason for this? And can I just add the 3 Tbsp coffee powder (with 2 Tbs hot water) to this recipe to make a Coffee Banana Chiffon cake🙏? If yes, any adjustments I need to make for the other ingredients for the Coffee Banana Chiffon cake? Thanks in advance for your attention and advise. God Bless!🙏

Adding water tray is to make the cake moister. This Banana Chiffon was made using my old microwave cum convection oven, which tends to yield a drier cake, thus I add a tray of water. For the Coffee chiffon, it is my new oven, it works well without adding water at the bottom. Thus, it is optional. For Coffee Banana Chiffon, yes you may try, but might need to increase baking soda, try using ½ tsp, as coffee is acidic too. Do share your result after trying.
