Dear Padhu, clearly you know what you're doing; because, I ground the batter exactly the way you demonstrated and the idlis came out incredibly soft. I used whole black urad dal - which was the only different thing I did, but there was no difference to the sponginess and tastiness of the idlis. Have tried many different permutations and combinations - sometimes from websites and sometimes shared by well-wishers, but nothing comes close to your recipe. Been a reader of your blog for over a decade and recently found you on KZbin. Thanks for sharing your knowledge with the world, because, truly, it's richer for it. God bless.

Hello Madam - any tips for fermentation during winter weather for rice+millet idlys

Basic requirement for fermentation is a warm temperature. These tips might help you. 1. Mix the batter well with your hands. The heat from the hands will aid in fermentation. 2. Wrap it in a blanket and leave it for fermentation. Use a big vessel so that the batter does not overflow and make a mess. 3. Switch on the oven lights and keep it inside the oven. Leave it there for a day 4.Another option is - you can pre heat at very low temperature for 10 mins. TURN OFF THE OVEN. Switch on the lights alone and leave the batter for 15 hours or more. 5. Keep it near a room heater where it is warm. Let me know if any of the above helped you after trying it our, so that it will be useful for others living in cold places. I am in South India, where the weather is hot, so fermentation is not an issue at all.

Hi Mam, can i store Udhayam Urad dal in freezer for a year? Because i am in Bareilly ( Uttar Pradesh). Here i can't get Udhayam urad dal in any shop.

Get good quality,fresh ingredients. Grind the urad dal to a fluffy batter. Then your idli will turn soft. Water measurements differ according to the quality of the urad dal n millet.

I dont think you should be mixing the batter like that after fermentation for idlis. We dont mix the fermented batter for idlys. Only for dosas you can mix. If you mix it, the idlys will become flat and won't be soft at all.

Not true. I always mix it well after fermentation and my idlis are always super soft. So mixing or not mixing is up to you . Either way it does not affect the softness of the idlis. Softness of the idlis depend on quality of ingredients, grinding and fermenting.

You have to mix it well. Urad dhal gets fluffy and rice or millet won’t. Urad dhal content comes to the top during fermentation process. Rice paste content stays in the bottom. Not mixing it well will give not so good idli or dosa when you reach the batter in the bottom of the container.

You can use the same measurement +1 tbsp extra. But keep it in the refrigerator for an hour before grinding and use ice water for grinding. It will give you fluffy batter.
