Too much fat. Its basically over 50% fat because he didnt drain it, or cut some of the fat of the meat, before braising it.

@@Hypergangnam Do NOT cut the fat off the meat before braising, that's a rookie mistake. When you're done braising, just skim the fat or use a fat separator.

It's true. I cook in Vegas, and I only pull the nice coated pans for delicate fish/seafood. For searing and sauteing I can generally use warped and beat pans all day.

Lololol. Obviously u don't know cooking very well. That pan is not bad at all. Very decent solid pan in deed. Just some colours which can be washed off by some powders. The coating pan u mentioned is non sticking for other purpose. A few hundred but always 50% off. I change my Jamie Oliver set every 2 years. Don't be too picky on cooking tv show. If Hiro has his own tv show, he would use some shinning pan as well for sure.

An interesting variation of an aromatic mirepoix for short ribs: classic French technique might employ finely diced celery, carrot and onion; whereas Chef Hiro uses the holy trinity of aromatics: garlic, garlic, and more garlic. Nice!

I love your recipe, this one in particular... Remember of my mother cooking similar dishes back to Italy. Only advised I would said to use a ceramic pot for the oven.... Cling film and aluminium are not good especially if cooking tomato and ingredients that contain acid like lemon... The aluminium is realising all the bad substance... Pour the strained cooking liquid in a fat separator. Reduce the liquid in a pan by 2/3, shake in a pad of butter and adjust for salt then drizzle over ribs. Silky, velvety reduction without the grease and potential indigestion.

Let me get this straight: remove the grease, then add extra grease in the form of butter? What's the point? The 'grease' you remove has far more flavour than the 'grease' you add (butter)!

@@alangeorgebarstow Use whatever fat and how much fat you like. Different fats add another layer of flavor and thus complexity. Those ribs yield a half cup or more of greasy fat. Too much for my palate to keep all of it. Coat your mouth in fat and that's what you'll taste. There's more flavor in meat than only fat ("only" being the operative word). Just eat a spoonful of beef fat instead and save the time and effort.

I am definitely trying this the next time I purchase short ribs. Have been watching so many short rib video’s. Each one with their own unique approach. But this by far was the one that inspired me to try it. I know I can handle it. Aluminum pan with aluminum foil. I can do this.

This comment makes no sense. Ribeye and prime meat are way more tender than these ribs. The difference is how you cook them. If you get a ribeye roast and cooked them low and slow that would be almost the equivalent to cooking this

I followed the recipe as best as I could tonight, used Apothic Dark wine, and let me tell you, this dish is absolutely delicious. I served it with mashed potatoes and corn. The short ribs were so tender , you could cut it with a spoon. Would definitely cook this again.

Man after my own heart, love all the garlic. Braised short ribs were my moms favorite, she's smiling down upon you:) If you haven't made already, do a 40 clove garlic chicken with about 80 cloves of garlic! I'd be too tempted to add onion, potato, carrot etc.
