Too much fat. Its basically over 50% fat because he didnt drain it, or cut some of the fat of the meat, before braising it.

@@Hypergangnam Do NOT cut the fat off the meat before braising, that's a rookie mistake. When you're done braising, just skim the fat or use a fat separator.

Take a look at that frying pan people. The best chefs don't need the greatest wares like you see on t.v. with those fake kitchen studios that offer their over-priced kitchen goods. The flavor is in the heart of the chef.

It's true. I cook in Vegas, and I only pull the nice coated pans for delicate fish/seafood. For searing and sauteing I can generally use warped and beat pans all day.

Lololol. Obviously u don't know cooking very well. That pan is not bad at all. Very decent solid pan in deed. Just some colours which can be washed off by some powders. The coating pan u mentioned is non sticking for other purpose. A few hundred but always 50% off. I change my Jamie Oliver set every 2 years. Don't be too picky on cooking tv show. If Hiro has his own tv show, he would use some shinning pan as well for sure.

An interesting variation of an aromatic mirepoix for short ribs: classic French technique might employ finely diced celery, carrot and onion; whereas Chef Hiro uses the holy trinity of aromatics: garlic, garlic, and more garlic. Nice!

I love your recipe, this one in particular... Remember of my mother cooking similar dishes back to Italy. Only advised I would said to use a ceramic pot for the oven.... Cling film and aluminium are not good especially if cooking tomato and ingredients that contain acid like lemon... The aluminium is realising all the bad substance... A part that you are one of my best chef in youtube... Keep the passion and the hard work 💪....

Pour the strained cooking liquid in a fat separator. Reduce the liquid in a pan by 2/3, shake in a pad of butter and adjust for salt then drizzle over ribs. Silky, velvety reduction without the grease and potential indigestion.

Let me get this straight: remove the grease, then add extra grease in the form of butter? What's the point? The 'grease' you remove has far more flavour than the 'grease' you add (butter)!

@@alangeorgebarstow Use whatever fat and how much fat you like. Different fats add another layer of flavor and thus complexity. Those ribs yield a half cup or more of greasy fat. Too much for my palate to keep all of it. Coat your mouth in fat and that's what you'll taste. There's more flavor in meat than only fat ("only" being the operative word). Just eat a spoonful of beef fat instead and save the time and effort.

@@knots9119 I am fully aware that the two procedures are different; however you cannot escape the irrebuttable fact that the first procedure is removing an animal fat from the recipe whilst the second procedure is adding another animal fat to the recipe. Butter is an animal fat.

i made this and included roasted garlic heads with hot crusty french baguette and cold kerrygold irish butter and homemade tennessee paw paw chutney....friends the bacon mushroom with the chutney was indescribably delicious !!

I am definitely trying this the next time I purchase short ribs. Have been watching so many short rib video’s. Each one with their own unique approach. But this by far was the one that inspired me to try it. I know I can handle it. Aluminum pan with aluminum foil. I can do this.

Short Ribs of Beef are my absolute favourite meat meal. It's more tender than ANY steak that I've tried. So fatty and delicious!

This comment makes no sense. Ribeye and prime meat are way more tender than these ribs. The difference is how you cook them. If you get a ribeye roast and cooked them low and slow that would be almost the equivalent to cooking this

U should remove the fat after it cooks from both meat and the sauce. Otherwise ya did it wrong.

I followed the recipe as best as I could tonight, used Apothic Dark wine, and let me tell you, this dish is absolutely delicious. I served it with mashed potatoes and corn. The short ribs were so tender , you could cut it with a spoon. Would definitely cook this again.

With the bacon drippings & mushrooms left in the skillet, I would have added some flour, and the liquid from the rib pan to make a nice gravy for the mashed potatoes. mmmmmm!!!!!

I think that would have made it too oily; the short ribs are usually oily enough; i would have just made sauteed mushrooms.

@@robin212212 Properly made gravy (pan drippings (flavored grease/oil from cooked protein), thickener (typically flour or cornstarch), water and appropriate seasonings is NOT OILY.

Are you serious lol. Ramsay meant 180 CELSIUS meaning 356 Fahrenheit. Youre not going to be able to do anything at 180 Fahrenheit, prob just keep food warm

Rich on rich. Love the basics of, but I'd chill the braise down and defat it, reduce it. Then rewarm the beef in the braise/gravy/sauce.

Hiro, I like to sear my ribs before I simmer it. Have you done it without searing? I would only assume that the flavor wouldn't be there if you did not sear it. What are your thoughts on searing or not searing?

Man after my own heart, love all the garlic. Braised short ribs were my moms favorite, she's smiling down upon you:) If you haven't made already, do a 40 clove garlic chicken with about 80 cloves of garlic! I'd be too tempted to add onion, potato, carrot etc.

I get there are "similar" recipes but even his plating and thumbnail/title/presentation is nearly identical to Gordon's from over 4 years ago.

This looks delicious. However I got here because Gordon Ramsay has almost an identical recipe. All the way down to plating. Watching that video recommend me to this one. I honestly do not care who thought of it but we will be making this dish! Kudos to both.
