Since I started watching Chef Jean-Pierre my life has changed completely. Preparation is now called mise en place. Onion is now called onyo. Food in the freezer now lasts 17 years. And all my meals include butter or clarified butter. Also my meals are 100x more delicious than before, and cooking is the highlight of my day. Thank you chef JP!

Same here! It’s the little tips and tricks like how to incorporate flour in a soup. I like how all of the flavors of these dishes are natural instead of using heavy seasonings. I do have a lot more alcohol in my kitchen now lol but it’s just for cooking.

Yea, I totally agree with you !!! Just yesterday I purchased a set of mortar and passels, a bread baking set that includes a covered bred pan to bake square breads ...ie...sandwich breads...a proofing bowl, a bread wisk, scrapers, and a bread dough slicing knife... I'm going to try my hand at making boiled baked bagels

This isn't just the best cooking program on KZbin, it's the best channel period. I haven't enjoyed watching a chef cook since the late great Keith Floyd. No clinical precise measurements, nothing too serious, the fact that mistakes are made and not edited out, definitely no calorie counting, brilliant humour, and most of all having fun in the kitchen and the passion for cooking. I have been cooking for about 25 years and I'm quite good, not brilliant, but okay. I must have 50 cooking books and I'm susbsribed to maybe 30 channels. Over the years the one book that taught me the most was Delia Smith's complete cookery course, it's like a cooking bible. But now, this channel has already taught me so much and I've not been here long, it's fantastic. Thank you chef Jean Pierre for taking so much time to share your brilliant knowledge x

I made this recipe today, with the short ribs and polenta. I served it along side of freshly picked green beans, onions, garlic and peppers from my garden. My husband was skeptical at first saying “just because a chef said it’s good doesn’t mean it’s good” and after I served this amazing meal, my husband oohed and aahed through it, pausing to exclaim every few seconds about how amazing this meal is, and how flavorful it is without being heavy. He said it’s the best meal he’s ever eaten, and I agree. Thank you Chef, and your recipes and personality make for very special dishes. Thank you for sharing this dish with me. My love and passion is cooking, and this recipe is the best I’ve ever made. The polenta was superb soft and baked in a cake. The sauce was perfect. The meat tender. I am in heaven. Thank you, I look forward to trying many more of your recipes. This is the first time I’ve ever learned to cook from a chef and not a cook, and it shows! ❤️❤️🤗🤗🤗

I usually put fat in closed used milk containers (they can’t be recycled anyway, being a multi layered product). We burn our trash here in Switzerland in special centralized furnaces, I am sure they are happy about my oil.

UK calling! Instead of using liquid smoke I use a pinch or two of Lap Sang Sou Chong tea, added about half an hour before finishing cooking, to give the smokey flavour. Perhaps Chef would try it out sometime.

My dear friend, every time I watch one of your videos, I get so much joy. Not only do we get educated in the fine art of food, but We also get the joy of cooking instilled in our souls. Cooking is a labor of love. I am not qualified to critique you in any way, But I use the dry mustard and brown sugar with a little flour as a dry rub before I pan-sear them, One just has to watch the heat. Even if the crust on the ribs gets a little hard during the process. It will soften up during the cooking process, The sharp taste f the dry mustard becomes very much defused in the sauce, so one is able to go freestyle and use it with a hearty hand. Love your work. You sir are a class act.

I made this recipe the other day. It came out amazing! I've never cooked short ribs, but I followed chefs instructions and it was a breeze. Of course it took me longer to prep and cook then it took him, but I dont do this for a living either. I say all that to encourage others to not be afraid to give it a try. The sauce I was left with is wonderful and will go great with lots of stuff. Knowing that it will last 17 years in the freezer gives me plenty of time to use it!

In my day no youtube, internet ,the practical cookery book was or bible, your methods and techniques are spot on ,so charismatic n entertaining to watch. Dear Chef Jean Pierre, I have watched many chefs online, you are my all time favorite. I made the Salmon with the Mustard sauce, I didn't have the brown mustard with the seeds so I used the garlic dijon aioli, that I had in on hand. My daughter was so happy. I have two chuck roast in my freezer I bought from Whole Foods amazing deal, 4.49 a pound for organic, pasture raised beef. So I think I am going to use this recipe to make the chuck roast with some potato salad. Chef its going to be off the hezzy. Thank you for being an awesome Chef, don't let these people rush you. Cooking is a passion and it has to be treated with kid gloves. If they want fast they can go to "Tik TAk Tok."

I made this on the weekend, I sent down the sauce and ribs to my daughter, she said the soup was delicious and she was going to have the ribs the next day😁😁😁 we laughed so much when I told her it was sauce for the ribs not soup. She loved it all the same. Thank you so much for your lovely recipes 🥰🥰

It’s very smooth and flavorful. I can see why you like it so much. It’s delicious!! 👍 This was delicious, I served this with mashed potatoes. Thank you for sharing all these techniques because where I live in the far western province of British Colombia Canada beef short ribs are quite expensive and hard to find. Popular I presume but not an ingredient that one dares to teach yourself to cook the hard way by making mistakes.

Chef, I'm sure that I have seen All of Your Videos and many of them over and over again. I have learned so much from you and the one thing that I always have you in mind is peeling an onion French style. I never see anyone else on TV or in person do it that way. I lived for over 13 years in France: Étampes, and Arbouville and my family does it that way by cutting out the stem and root first. But what I want to say here and now is that I marvel at the enthusiasm you display in each of your videos as if it was your first time in each and every one of them. You are truly an example of a man who loves his work so much that it can be said that "you have never worked a day in your life."

Just ordered Chef Jean-Pierre’s recommended digital thermometer but unfortunately not through the JP site as it doesn’t ship to Africa. Also made this excellent recipe but substituted the Cognac for some VSOP brandy. The sauce was amazing served on a bed of fettuccine. Thank you again for another superb dish to add to my repertoire!

I am from Washington State, I grow Walla- Walla sweets, I then caramelize them and freeze them. They are so so good and they get as big as a soft ball.😊
