You really do find the BEST sites to boondock. Sadie can climb big rocks, amazing. I am not a vegan, but that casserole looked really yummy. Hugs to you and Sadie, love her white paws. She is really a great dog.

I loved your video. I have been watching you for years . You have inspired me in many ways. I have also enjoyed listening to your "as i see it videos" but my favorite videos I must say are simply the ones that are just based on your daily life and what you do to fill the day along with boondocking tips. they are relaxing and not fake and made up like alot of peoples i see today. I am very close to getting to do the same as soon as my last child is finished this year with school and I absolutely can't wait. thank you for sharing , have fun and stay healthy and safe!

I put a heavy duty tarp around the base of my RV in the winter. It really helps with keeping the heat in. Beautiful area ❤️. Thank you, Carolyn. 👍👍

Carolyn, I enjoyed this video SO much! Leadville is my hometown and I feel the pull to go there every summer. I have driven through there this year but have not camped there. I appreciate the glimpse of Mt. Massive from your campsite and look forward to you other videos from there. I hope you enjoyed it as much as I have enjoyed seeing it through your view. Thank you!

Very nice video, Carolyn. Sadie seems like a great watch dog. She is so aware in her environment. She'll be a great dog to alert you to anything out of the ordinary -- probably has already. Such a pretty girl, too. My little Peke alerts me to all manner of things I'm not even aware of. He sometimes gives a whispery wuff before coming to me groweling and looking toward the area of concern. Usually, though, he just growels. I'm not a fan of yappy dogs. Thankfully Pekes are not known to be barkers. Even so, I worked with him to just growel. Dinner looked yummy and Leadville is now on my list to visit next year. Hope you got your original campsite back but, if not, the second one with the rock for Sadie was gorgeous. 🌲❤🐶😽😻❤🌲

I make a black bean sweet potato soup that is delicious. It doesn't call for Kale but I add a little to it. Your orange bell still had the price sticker on it when you chopped and added to the dish, which looks delicious.

Carolyn, I made this dish the same day. Excellent! I added some green beans from my garden. It’s a recipe that can accommodate any veggie, I think. And the leftovers were great with salsa.

Yum, I love yams or sweet potatoes with boiled then baked in the oven topped with brown sugar and cinnamon with chilli topped with a little sour cream, Yes, you could write a vegan cookbook for the vegans, yes, Sadie seems to be a great companion for you, awesome she jumps on the rocks for you! Heyo, I have a fabulous training tip that works 100% with my dog (and I didn’t even start until he was old). You know how most dogs don’t like to go out to pee when it’s raining? Here’s what to do: Every time Sadie “goes,” say, “Do your business.” Repeat again and again the entire time he is peeing or pooping. Say it in the way you would when she is reticent about going out in the rain. With time, when you tell her to do her business, she will just go do her business when you let her out (rain or shine).

Cattle dogs are very smart, resilient, strong, they handle pain very well. My 12 y/o didnt slow down til she turned 11 ys/o. She has hip dysplasia but never cries. I have her on meds and I know she hurts but she has never cried. Sadie definitely has cattle dog in her, she reminds me of my Xena girl when she was at that age.

Funny. I made a very similar recipe tonight as well from a plant based cookbook I just got off of a Facebook ad. Except mine was enchiladas. Just ad enchilada sauce to your mixture then roll up or make it like a Mexican lasagna and layer the mixture with tortillas instead of rolling them up. You eat exactly like do except I do eat cheese but no meat.

She is soooooo smart! And you're smart keeping her mentally stimulated, she needs it. You could teach her to "whisper" during those times she just mouths it. So would be using a different trigger word for different target action. When I teach "speak" and "whisper", my voice is loud and excited for "speak" and really quiet when I say "whisper". Might be fun to teach her. Bet she'd get it in no time☺️💕

Lyon, Yeah, I think it was paradise, that's why it was so hard to leave! Sadie is quite the adventurer and not afraid of anything.. the perfect companion for me!

Wow....you’re an adventurer, love animals, you were able to find a beautiful location to call ‘home for now’ , hang out with a cutie named Sadie...and you’re a Vegan! You’re my new best friend! I admire you. You’re so self sufficient. I just really found your channel. I’m 72 and can’t do what you do. You’re young and healthy and still have lots of spunk. Loved the tour. I’m a little spunky yet...but don’t go out much. I have two inside stray cats that will never go outside again. This is their home. My little modular home. Can’t work anymore, grandkids all grown up (helped raise them when I wasn’t working). Raised my two girls on my own (ex had some drug/alcohol problems that I couldn’t fix). I don’t drink or do drugs and I just wanted a stable home for my girls. I love that area you’re in. Looks so very peaceful.....and I absolutely think if we all spent a bit more time in nature, we’d be happier. Sadie is so sweet. I used to have so many dogs when I owned my larger home. Big fenced in back yard. I’d foster the puppy mill dogs (the older dogs) and older shelter dogs that got dumped there. I adopted three if the dogs myself. Fostered about 14 dogs altogether over the years. I loved every one of them. Still remember them. I’d take all of them together for long walks and they walked so well together. They all got adopted. Fostered a few beautiful greyhounds. I hate dog racing and horse racing and bull fighting and...lots of stuff that causes harm to animals. They all got adopted into loving forever homes...but I still cried when they left. Moved back to Jersey after my youngest daughter passed from heart problems (she was 37). She also loved animals. She was a vet tech and started working with animals at the animal hospital (near our home) while still in high school. She was a great mom, helped save many animal lives...and her name was Dawn. I’m rambling. Only because her birthday will be in another week. I get just a wee bit sentimental around this time of year. I have another daughter who has no children but is a teacher of kindergarten. Worried about her and school...with all this Covid going on. After I moved back here, into my modular home....I found out there were some stray cats. I got a rescue group to help me trap all of them (wasn’t easy🤦‍♀️), but they’re all tnrd and I’ve been caring for 12 feral cats for almost 9 years now. And a few raccoons and opossums that drop by late at night. They like the cat kibble.🤷🏼‍♀️ Anyway...I watched a few of your other videos. You’re just an amazingly caring individual. And I see that you enjoy nature also. I don’t even know how old this video is now that I’m typing this. I hope you and Sadie enjoyed your outing in that beautiful location. Stay safe! Those little red pine cones are so cute. I'm sure it smells great there. I miss the snow, having moved to the desert about 10 years ago. There is nothing like the peace and quiet that comes with a blanket of snow, aahhhh. Your video is a nice cooling experience as I hide from the 110 degree heat in the AC. I would love some insight about how to change my diet to more plant based. Being a country girl raised on meat and potatoes, I have never developed a love for veggies. I am allergic to the oils in bell peppers and they are in so many veggie dishes. Being a single person I find it challenging to cook for one without a lot of left overs. So so e suggestions for possible vlogs... Cooking for one and easy tasty veggie recipes. I may try the black bean and sweet potatoes dish minus the peppers. I actually sounds good. That meals is just what I meant to cook this weekend even adding the kale but minus the tostada and nutritional yeast. Now I think I will add nutritional yeast. Thanks for sharing. Sadie us such a pretty girl.

My thoughts exactly. Especially Vegan for traveling and conserving as Carolyn demonstrated with avoiding traditional things like pre-heating the oven. Its the little things that add up.

What a gorgous area,I hope it doesnt get too populated with tourist. Im watching this at 11pm and your dinner made me want to cook something up! Too late,though. Maybe bran and oat milk. I love being meatless,theres so many good healthy dishes to make. Stay safe.

Girl you should do camp cooking show. I was a meat and tator man until i became nomadic. Haven't had meat in years now. Feel so much better.
