A fishmonger is kind of like a fish butcher. They get the whole fish directly from the fishermen, they "butcher" it and then sell the parts (or sometimes the whole fish).

"The change in texture with the sprouts you added..." After Bert and the guys had been making sushi rolls WITHOUT ANY VEGETABLES for an hour. With a large bowl full of fresh veggies and the pack of sprouts for them on the counter the whole time. Bert should have an expert like Liwei come on every episode as a guest co-host to help with the actual prep and cooking. Maybe they'll actually make a meal instead of like what happened in the Tim Dillion- Whitney Cummings episode where they taste tested caviar then Bert just dumped a gallon of mayonnaise on some Salmon and said eat up pigs!

Love ya to death Bert but those Kamikoto knives are NOT it. I've sharpened north of 20 Kamikoto within the last month for two different clients and I've genuinely never had to sharpen something with a worse grind or steel. First off these are fake single bevels, actual Japanese single bevels have a hamaguri grind on the bevel side and urasuki and uraoshi on the non bevel side, which are a hollow grind with an exterior flat lip that provides an air pocket for food release and a surface for sharpening. Kamikoto are incredibly thick behind the edge with what is supposed to be the shinogi line only a few mm away from the edge. They're roughly chisel ground with no ura. Even worse is that they're made from 420J2 stainless at sub 53 hrc, that's softer than outdoor tools likes machetes or axes that need to be soft for impact toughness. 420J2 is what you'd find in a $5 Wal Mart folding knife. It's so soft yet also quite brittle because of the terrible grain structure, this means you'll lose your sharp edge after a single use, even the sharpening process is a pain in the ass. Usually soft steel is easier to sharpen due to less wear resistance, but Kamikoto's heat treat on 420J is so bad that when you begin to raise a burr on the stones it starts to disintegrate and takes some of your apex with it. I'd rather prepare food with a jagged soup can lid than have one of these pieces of garbage in my knife roll. Kamikoto is faking Japanese provenance with shitty Chinese factory made knives from steel that's considered single use disposable grade.
