One more thing from me. I'm one of those people that have the gene that makes cilantro taste like soap. So I leave it out. The roasted tomatoes really make this good mixed in with the pico. Chunky salsa is the best!!

Poblano / Ancho (dried) and Anaheim chilis are the mildest and are great substitutes for this salsa recipe. If you sauté the Ancho chilis you’ll get even more of a smokey flavour. I’m like you, now I get heartburn too with the hotter chilis, unfortunately.
