If they listened to Saul's advice to buy the laser tag, they wouldn't had this problem. The wonderful thing in the laser tag business is that they could add other side businesses like french fries stand, softdrinks dispensers, even merch stores.

What Walt needed was to establish shell corporations that would own multiple businesses that would run independently without Walt or Jessie having to oversee them. Saul and Mike could help him find people to staff in key positions to basically slip in the extra cash whenever they deposit their earnings. The laser tag place, nail salons, restaurants. They could buy up businesses that already exist and already running one by one with little change in staff or operation. Heck, I've heard stories of the mob basically hiring independently owned businesses to launder their money for them. They'd give them the money, they'd funnel it though with their real revenue, take a small commission, and deposit the money somewhere the mob could access it.

I like how Gus thought Jesse was going to be unpredictable in the beginning but it ended up to be Walt and Jesse was easier to control

The funny thing is, Gus did a great job explaining away his prints in Gale's apartment and there may have even been truth in how he originally met him. Walt could have done the same when Hank showed him his notebooks. He could have said he met him once at a conference or event chemistry related and that Gale even reached out to him recently asking for advice on something he was working on and showed him some of his formulas but couldn't show him everything so he didn't have the whole picture. He helped him out best he could and apparently it was good because Gale gifted him the book in his bathroom, when Hank breaks it to him that Gale was cooking Meth, Walt can play innocent and act shocked that he helped a drug chemist and suddenly terrified that Hank would have to arrest him, to which Hank would of course put him at ease saying that if he didnt know what Gale was doing then it's not his fault and he wouldn't be in any trouble.
