Sancocho can also be a "7 carnes" sancocho. That adds up tons of flavor. Another thing is that sancocho not only have plantains, can also have potatoes yuca and even tayota if you'd like.

She's mexican, so I get that she doesn't understand plantains but trust that they are not random in a sancocho. The plantains and the yuca soak up a lot of the flavor from the meat and the broth and add texture.

I have great memories of sweating my ass off eating sancocho with Diablito peppers AND hot sauce under a rancho in the shade in the campo. And caldo is soup not stew- that would be a guisado dish. Braised. I worked in a kitchen and of all Latino foods, Brazil, Peru, Mexico top 3. Peru my favorite cause of all the dishes, diversity.
