I’m so glad other people remember how awesome Pancho’s sopapillas were! We had one in Louisiana that we ate at every few years when I was younger. I’ve loved sopapillas ever since. The last time I checked a few years ago, Pancho’s still had a few restaurants in Texas. That was before covid though so things might have changed.

In '72'73 I worked at La Hacienda in Old Town Albuquerque. I was the Sopaipillas maker in the restaurant. I was in a little booth adjacent to the Dinning Room and people would watch me make them. I'd toss them up in the air into the hot oil. The salad station was right behind me in the kitchen and I get guacamole to stuff in them. Fun times!

I was born in Albuquerque and lived there for my first 32 years. Now I am in Arizona. Every time I visit, and I mean EVERY TIME, I go to El Modelo to get stuffed sopapillas. They are next to the railroad, almost under the bridge at Avenida Caesar Chavez. Still a hole on the wall. Everything is take out, no tables or seating. The absolute best New Mexican food experience!! My mouth is watering 😋🥰❤️. Thank you, Marcy for the recipe and the wonderful memories!!

I am from New Mexico and growing up sopaipillas were not considered a "dessert" they were actually part of your meal, eaten in place of tortillas. I discovered that they were considered a dessert when we visited California. Wow what a culture shock, but they are delish with honey or cinnamon/sugar. But I go traditional, dip it in your New Mexican red chile or better yet, go Christmas!

Live in California but my grandma was from Hot Springs NM before it was Truth or Consequences. She made these with us when we were little but always rolled it out into a circle like a pizza and cut into triangles, then put slits in them with a knife so they wouldn't be one large puff. We ate them with beans in place of a tortilla also, or sometimes honey or plain. I prefer them savory, and bet they would be good stuffed too.

I went to a restaurant in Albuquerque many years ago that I believe was call Seraphinas (something like that). They had the most delicious stuffed sopapillas, filled with the lightest egg and potatoes and covered in a red enchilada sauce. They were magical. 19 years later and I have not forgotten that meal. I just found your channel and I am enjoying your recipes! Being born and raised in CA, I had never heard of sopaipillas, not until I married my husband who was born and raised in NM and El Paso, TX. My first time eating them was at Panchos in El Paso and I remember the flag. The sopaipillas were simple, but delicious! I have also been to La Posta in Mesilla, and they have delicious ones too. I will definitely be making these for my family! FYI-My grandmother and her parents were born in La Mesilla. I love going to Mesilla, to visit the San Albino Basilica, they've been very helpful with my genealogy research. Thank you for your recipes.

I am from New Mexico and when I was small my parents would take our family to La Posta in Roswell. This was between 1947 to 1958. My sis would get a plate stacked with tortillas and red sauce and I would always get a basket of sopapillas. When we left New Mexico it was a sad day. I've always wondered if the restaurant was still in Roswell. Now that I'm 70 I would go back just to experience it again.

My mother grew up in Santa Fe. We had Sopaipillas served with our pinto beans. We ate them as a bread not a dessert. We tore off the top and stuffed the sopaipilla with our beans and cheese. Later in life I made them for my children and now my children make them for my grandchildren 😊 s

Oh my gosh- Panchos!!! I have talked to THOUSANDS of people about this restaurant since I was a kid! My mom used to drive me from Houston all the way to El Paso once a year, just for my birthday, because I loved this place so much!

If you ever make your way to Silver City NM, find Jalisco’s downtown, hands down the best sopaipillias anywhere!!!! I’ve had them all over NM and Jalisco has perfected the recipe and they are massive too 👍🏼👍🏼👍🏼👍🏼

My first introduction with them were stuffed! Delicious beans and seasoned ground beef with shredded cheddar cheese. They were topped smothered in spicy chili verde and more cheese and shredded lettuce. OMG! They were the most delicious thing I’ve ever eaten. The cook of my mother-in-law’s cafe’ was from New Mexico and she introduced me to many of her family’s recipes. Now I show friends and family how to make her chili verde. I even spent time with her and her family to learn how to make tamales and we would form an assembly line and make them for Christmas! The chili and cheese tamales were among my favorites!!

I used to live next to Old Mesilla in the nineties. Such great restaurants. There was a place in San Luis, Colorado that would serve sopapillas with honey butter or with ice cream and chokecherry syrup. So amazing! Been to La Posta, and Andele in Mesilla a few times each. Nellies in Las Cruces had these babies too! Loved Nellies, went many times, I lived in Alamogordo, 14 years.

There are many variations all the way from Tierra del Fuego (Chile, Argentina) to New Mexico. It's a fried bread brought by the Spaniards but of Arab origin. The original name was sopaipa.

hi Marcy we are going to make these tonight it just sounds so good .. We had a restaurant in Denver that made these so soft ask you could eat combos beef or chicken meals they would seat you with your meals i always raised the flag to order the sopas and the refried beans and what ever i wanted but the sopas. were the star of the meal. they also had shows like divers, magic acts games and game shows plus more things to do . The restaurant was Casa Bonita good memories for us .Thank you for the video im sure i will love these with hot hamburger and diced fried potatoes and refried beans ....thank you marcy

well marcy they reminded casa bonita for the sopas were fluffy and soft i did use milk instead of water altho im sure the water is great also. i will use this recipe from now on thank for replying have a great week marcy...

we had the sopaipillas with fried potatoes,hot or spicy hot fried hamburger kinda like sloppy joes but hot so good with beans stuffed we had the best meal has anyone been to a restaurant where they made the tortillas in front of you while waiting in line for your food i thought that was interesting check out casa bonita on the google search they will show you the whole experience if it is still up have a good day marcy ...

Yep, ""La Posta" is the place I first had "Sopa's" and fell in love with them with Honey. A basket was brought to the table. And Panchos in Texas when visiting. These places spoiled me. Some restaurants take a tortilla fry it and call it a Sopa, NO NOT FOR ME! I'll give your recipe a try it looks authentic.

Ii am from Silver City , NM and we did not have sopapillas for dessert either. We would get them when my mother didn't feel like making a stack of tortillas for a family of 8. Of course, we loved those times and would have preferred them more often, but my dad didn't care for them. Come to think of it, we probably had them when she was mad at my dad. Unfortunately for us, it was not often enough. Fond memories!

The one on Central, and the one on 4th St. are where I would get my chile relleno-stuffed-sopapillas topped with green chile. Didn't matter if I went there feeling sad, angry, or already happy, every time, I left with a big happy smile!!!! 😀

My ex and I were always at Poncho's Mexican Cafe when I lived in El Paso !! In fact that's the place I was thinking of when I was watching you make these! I'm going to Albuquerque in September and I don't know if it's still there, but before I left Albuquerque I actually found a Poncho's Mexican Cafe! I'll have to see if it's still there before I get there. I love Sopaipillas! Yum!😋
