I'm vieja (old), 73, and I recently learned a new trick with sopapilla, just in case there is any left over dough (doesn't happen often, right?) or if you want to pre-prepare. Roll out your pieces, cut and set them on the tray as you have done, then FREEZE them tightly covered. You can drop the frozen dough into your hot oil and they will 'poof' just like you were making them fresh!

A retired bull fighter opened a restaurant in the town I grew up in. He brought his grandmother in from Mexico City to teach his cooks how to authenticly make the recipes. The Sopapillas were fantastic & I've missed them (and all his yummy dishes) for many years! I'm definitely going to try your recipe, they look wonderful too.

One Christmas, my mother had me help make the bunuelos. She'd fry them, and I was supposed to shake them in the cinnamon sugar and put them on the paper towels. Well, I must have forgotten the purpose of my being there, because I put most of them in my mouth. She looked over at the few on the towels, and the sugar ALL OVER ME, and I think she took a wooden spoon to me. I don't really remember, because they were that good. I don't remember helping in the kitchen again, until after I could see over the stove top.

I love this video! When I was in middle school, our Spanish teacher taught us about sopapillas. I made them numerous times as a kid & enjoyed them. I'm now in my early 50s. I discovered sopapillas while living in New Mexico in late 70’s! I would fill them with rice and beans and then trade off with honey! You can do anything you want with those little puffs of delight!! You’re so fun to watch and listen to Rachel!

I remember a little place in Albuquerque that sold stuffed sopapillas. In the 50's you could put your order in take a tour and your food would be done by then pay and go. Had a great orange drink in little milk carton to wash it down. Yum great memories

I just found your channel a couple days ago. Rachel, I love to watch you cook. You have things so organized and right ready to use. It's like watching my Mom cook again.😊 She took her passion for cooking from home to what became a very successful catering business and was the chief cook there for a good number of years. OMG! I’m so happy that I found your videos and have subscribed to your channel. I see so much of my mother and grandmother’s cooking in the way that you do things. I just love the way you do a yum when it’s time for a taste test, I just start to salivate and wish I was tasting it too! I’m in my 70’s and wish I could do more of the cooking, but my arthritic wrists don’t always let me do to much of that! A childhood favorite of mine...54 now..popped the bread bubble and poor honey inside with butter. I never have been a sweets gal but these I'm definitely going to give a go. Thank you, Rachel! I have made sopapillas since my mom taught me when I was young. I'm decades older now and I still love how versatile these puffy pillows are. My favorite ways to eat them are stuffed with pork chile verde or beef chile colorado. For desert I like them sprinkled with cinnamon sugar. Just so you know, I've viewed three other video recipes for this treat on youtube. Yours are the best!

Rachel, I used your recipe to make sopapillas today and my husband ate 8 of them...3 were stuffed. They were so good and they puffed like you wouldn't believe. Thank you so much, you are the best. I just wish I could figure out how to make them gluten free(I'm the only one that has to be gf).
