Lasagna is good the next day if you don't overcook the pasta. I know its a bit of a debate whether or not people boil the lasagna sheets before assembling, but if you don't, it keeps in the refrigerator extremely well.

Hey there, I can hole Hartley say that coming from a family of cooks and bakers. I have to agree with you Erik on this lasagna topic. You guys really should do a taste test tho you can tell the difference. But you are right it’s a chore. lol But for best results just make two the exact same but open/cut into one after baking them, keep the other wrapped up and refrigerate for 24hrs then re heat it IN THE OVEN. that’s the trick! My family usually makes it day before. Hope this helps educate some people.
