As a Korean myself, this is awesome~ Koreans create all sorts of dishes with kimchi : stew, fried rice, noodle, dumplings,, even pancakes! Love all the creative ways to incorporate kimchi into more dishes

Yeah, completely agree. I think they do it because it results in a better dish, but I do think it kinda doesn't force them to be wholely original which might be okay... I mean cooking is collaborative... I don't know. I feel mixed.

I think to have some appreciation of the food team they should film the process of video idea to outcome. I think (and assume) the video idea is decided, normals start spitballing a basic vein they want to go down and the food team build and support experimenting and guidance for execution. If that's so to me it isn't too far off the process experimental home cooks go through but speed run with hands on support.. as I'll read blogs and take advice once I have an idea, watch an Adam Ragusea video if there is one to see a range of executions and then try something. If it fails or is imperfect I might try again with tweaks, or commit to memory what I thought was missing when I do it again in future.

I feel that while it's definitely innovative and I'm seriously contemplating testing it, when you think about it it's rely not that strange of a combination. Pineapple and caramel is not hard to imagine, pineapple and chili is a well known combination, so what you are adding is the fermented quality of kimchi, and you can make most things better with some fermented something.

But the food team is there to guide it, just like James used to guide recipes in the background as the development chef for Sorted. What I do love is that you can clearly see the influence of the normals in the dishes - it's still very much their individual styles.

One of my preferences in fusion food is that I can still identify the origins of the dish. In Jamie's and Mike's, they retained the spirit of the inspiration. Jamie's especially, seemed a perfect wedding between Korean and Indian elements. The flavors and textures are familiar enough that I can tell just by looking at it that I would thoroughly enjoy it. Mike's looked delicious, but I would have had to actually taste it to judge how successful it was. Based on looks alone, I would have handed the victory to Jamie, but if I had been able to taste Mike's, I might have reached the same conclusion as Ben. Baz gets full points for creativity, but he might have pushed the boat out too far. It might have been delicious in person, but its identity was lost.

So my mum makes this spicy lemon pickle with jaggery or sugar in it, and Mike's kimchi pineapple tarte korèan sounds like it would taste very similar. I think I'd love it, but in a small portion. One of those might already be plenty.

Mike's is the one I'm most likely to try at home, as love cooking with pineapple. Jamie's would be a fab starter or sharing platter, and Barry's is a takeaway order for when you've had one of those weeks.

Totally agree with Ebbers comments on the crunch from the Kimchi. Whilst the funky fermented flavour is one way, blitzing it to remove all the crunch is missing something. I like mixing some kimchi through Steak Tartar along with some diced asian pear and sesame seeds.

Seriously, if you find a can of Picky Wicky Kimchi (the brand they use in this video), give it a try! It is already stir-fried, and doesn't include shrimp or shellfish at all. So the flavor is much milder than most kimchis. Putting it in fried rice with cheese is one of my favorite lazy meals now.

I have never had kimchi, but went to the Asian Market on Friday, was going to get some there and forgot about it. That place was freezing cold. I would probably try the pineapple kimchi dessert. It looked really yummy.

My favorite uncommon use for kimchi: grilled mochi (rice cake), filled with chopped kimchi and cheese, brushed with soy sauce and wrapped in seaweed. So good!

Something I wonder from those battles (and from most cooking shows actually) : considering that we see the normals preparing their dish individually in the kitchen and they all look quite time consuming to make, and at the end we see three plates in front of Ben, have two dishes been sitting there getting cold while the other one is getting done? How much time takes place between the moment the clock for the cooking ends and the moment the eating starts? Are some dishes warmed back in the microwave or something ?

I do agree with Ebbers, been using Kimchi myself in cooking recently, very versatile and can be an easy refreshing little side to any dish, also for fermented cabbage doesn't taste MASSIVELY CABBAGY like we might expect in the UK being used to boiled cabbage.

As a Korean Canadian, I hear "Korean fusion" and i get concerned. Korean food often has bold, unmistakable, flavours that don't really play well with others. But when it works... IT WORKS!

I actually do agree with Ben. Before he revealed the order, that was my order too, for the same reason. Barry was too much into one thing. Jamie was interesting, but not enough. Mike was creative while not going overboard.

I really think that Jamie is getting surprisingly good in this kind of stuff as time goes on. In my opinion, his idea was the best example of fusion. Barry has just overdone it, and however Mike made the most interesting one, but I would still try the pakoras as a "go to" kimchi fusion dish.

I've had tropical fruits in kimchi-laden noodle and rice dishes. I've had pineapple with black pepper and chillies in dishes. So it's no surprise that the flavours work together.

Well now my son wants to try kimchi so thank you guys! I’ve been trying to get him to try it for years but the color and what was in it always made him hesitant. Now he’s excited (and to be honest a bit annoying by constantly asking) about when exactly will be going to get some from the International Market by our house. 😂

We make pepper(hot) roti with kimchi now. The kimchi levels up that pepper roti! You get that tangy fermented taste with the pepper kick, total balance of flavours. Yummilicious is an understatement

I make my own kimchi once or twice a year in 3-5 gallon batches (so think one of those big hardware store buckets, if you have a hard time visualizing volume), and we like to do the following: + Kimchi burgers -- lightly seasoned beef patty, mozzarella/muenster/oaxaca cheese melted on top, and a handful of warm (but not cooked) diced kimchi on top of the cheese. Any bun you want + Kimchi egg salad -- regular mustard/mayo boiled egg salad, but with diced kimchi tossed in + Kimchi mac n cheese --- 1lb dry pasta cooked in 2qts whole milk, stir in 3 heaping cups of grated cheddar when the noodles are just shy of done, add any seasonings, stir kimchi in upon serving. (trying to add it to the whole batch will just curdle the sauce once it sits for a few minutes) + Kimchi breakfast burritos -- standard breakfast burrito stuff, egg/cheese/chorizo or beans/mole, but instead of other vegetables or salsa, use kimchi + And of course the more classic fried noodles, jjeon, and just eating it plain as a side dish with rice.

Kim Chee into scrambled eggs as a omlette filling or take that chopped up and added into fried rice. Works great in hot pot or stewed in a soup for hangovers

I'm so glad that after these guys met up with the Korean Englishman group they decided to try out Korean food. They even used the same brand as them for the kimchi!

I am so excited that y’all have been journeying through Korean inspired dishes and ingredients. I think Mikes dish is one that looks so different, that’s want to try it and simple enough to do so. I can not wait for more banchan videos! My family has homemade Korean for our Christmas dinner. I normally make all the banchan. I love to follow along to Maanchi videos and change a few things here and there to fit my family better. Gentlemen, thank for this battle. It was wonderful.
