I grew up in IRELAND in a family of 10 kids and we were blessed if we had any dinner? and pigs feet was dinner quite a bit. We had HEART, KIDNEYS, LIVER and COWS TONGUE 😝. These meal we called POOR MAN'S DINNERS.I think about what my poor folks had to go through to feed us, Cod Bless them they tried🙏👍

I remember my grandmother putting on a pot of pinto beans and pigs feet growing up. I make a very good salary but no matter how famous or well-off I am, there are 2 things I will always eat and that is a good pot of beans and pigs feet,... lol. I love them!

I remember my grandmother cooking pig feet and pig tails... boiled and BBQ...mostly in the winter/fall....so delicious....granny grew up on a Georgia farm. We top it w/hot sauce.... A slice of cornbread with a glass of ice tea.

Good morning Chef. I was raised by my father in a small town in West Texas. My dad worked at the airforce base. Although he was paid well we were tought to watch my grandmother when she cooked anything. Iam blessed to say that her lessons were so worthwhile. I am 66 now and have beans or black-eyed peas with pigs feet as she called it trotters and beans. Thank you for sharing your video with us and God bless from west Texas.

My mother and grandmother loved pig's feet and ears. Pickled, roasted, and bbq'd. Grandmother also used to make souse meat/ hog head cheese. IDK if there's a difference because if I remember correctly, she used the terms interchangeably.

I love HH cheese. My stepdad used to make it around New Years. Before my mom passed, she taught me the recipe and it is delicious. In CA itz hard to find “good” head cheese. I live in SoCal nd for the past 8 years I haven’t found good head cheese. Once in awhile, my daughter will travel to Compton nd bring me some back from a lil meat market out that way.

My Mama use to cook pig feet & I love them. Also I love pickled pig feet. She cooked neck bones also and they were so good. She cooked the simple way. Salt and pepper only for seasonings. Love your channel. You cook a lot like my family did when I was growing up and I still cook these things once in a very long while because like you said, some people think I’m crazy when cooking these dishes but they are delicious. I'd love to have a big ole plate of pig feet and beans! I was born and raised in southern Louisiana. We ate everything on the pig. Love hog head cheese. I now live in SW Missouri an i find it hard to find pig feet and tails. Thank you Chef for bringing back good memories.

I remember going to a recommended soul food place built into a converted gas station with some friends in college, that was serving pig feet just like this with beans as the lunch special, and they were absolutely shocked that my white boy self ordered the pigs feet. The chef even came out to "meet the white boy that eats pigs feet" and they were absolutely tickled and gave me a good-natured ribbing about it. Country is country, my grandparents on both sides were farm kids in the depression and nothing was wasted or "unfit" to eat, and that was passed on! The food was so damn good and this immediately reminds me of it and those good times, and I can't wait to cook it myself. RIP Real Deal Soul Food in Waco Texas, great food and great people, and I'm glad I could have my college graduation dinner there and that I found this channel!

My Dads favorite meal besides fried Beef Tripe, was pigs feet! As a teacher, I respect everything that you say about using the. Whole Animal! I’m retired now, but used to teach a song called “ The Old Sow died in the Spring”! It talked about all the things they used the parts of the Pig for! “ What do you think that they used with her hide…. Made the best saddle that you ever did. ride!” Thanks chef Jeffrey!❤😊

Growing up in South Georgia, I remember my uncles slaughtering a pig once a year..All the family would gather and the pig was distributed..No parts were wasted..The nostalgic memories are still with me today..💯💯👍👍 I remember buying the pickled pigs feet at the neighborhood store, they were a treat..

Good afternoon Chef Jeffrey, you are bringing back memories of eating trotters from pickling to Cajun style and beyond. This is what I called old school soul foods. Whenever I go back home down South to see my elders, they will be cooking some forms of pork and a rice dish 😋 talking about Good eating. They grew everything that they ate. I will try to help them in the kitchen so that I will learn how it's supposed to be made correctly. My elders will keep you straight on who's the boss when you come into their kitchens. I even got my hands Spanks from them for not following their directions; however, you got to laugh at it because they will always be older than you and telling you how to do things even if you're grown.

That looks great. I love stewed pigs feet with buttered rice and hot sauce. Sometimes I add strips of beef honeycomb tripe to it. Either way, it's delicious. Distilled apple cider vinegar is used in both versions. I was told it's used to cut the grease. The only places where fresh pigs feet are found here now are grocery stores in African-American, Chinese and Latino neighborhoods.

Hi Chef Jeffery. Memories! I grew up loving pickled pigs feet!! 😁 A good friend of mine taught me her way of making fresh mustard greens. She taught me this back in the 90's. Cook the pigs feet, with all the seasonings and onions and bell peppers and garlic. When they're almost done, add the fresh greens and a jalapeno pepper. Yum!

My mom's family were raised on a farm down in the hill country of Texas. They raised their own animals (cows, pigs, chickens, sheep & goats) and butchered themselves. Nothing went to waste. I recall eating pickled pigs feet and the scraps from the hog were cooked in a black kettle over open fire and they made head cheese, liver sausage and blood sausage. I think the pig ears and tail were cooked for the head cheese. We ate everything but NOT chicken heads or feet. 😅
