Fresh onion and dried onion? Fresh garlic and dried garlic? Why do that when you can just use more of the fresh stuff?

Because when you sear meat the main purpose of doing that is to help lock in flavor. So By the time she places the seared meat back in the pan inside the broth mixture it is already partially seasoned. Then while it cooks for the hr & & half it’ll not only be tender, but it’ll be fully seasoned by then.
