Alzheimers is tough to cope with. But your grandfather saving the skin for you shows in some small way he remembers you and loves you, even if he may not know your name. Sometimes love doesn't need memories, it's just always there. I love your channel and the recipes you make. And your bubbly personality is terrific!

I was raised by my grandparents, and both of them have been gone for over a decade now....but your story brought vivid memories to my mind about how they would do special things for me like your grandfather does for you, even after I was grown and married with children of my own. Thank you for sharing your story...it made me remember some lovely things I haven't thought about in years, and made my heart swell with love and appreciation.

I getcha about your grandpa. My nan had alzeimers for over 20 years, and towards the end the only thing that made her come alive was us singing 'Somewhere over the rainbow', like she used to sing to me when I was two. She used to try and rock me on her lap still, expecting me to be a toddler instead of a grown-up.

Excellent dish! My mother in-law made this for me while I was in Zunyi for Chinese New Year and for that moment as we were eating dinner we all forgot about the coronavirus which is plaguing China. I can't thank you enough for posting this recipe and it brings a tear to my eye thinking of that dinner and the loved ones I had to leave behind when I was ordered to leave China. I will practice this recipe so I can make it for my wife when she returns hopefully in April. You see I have a lot of time on my hands for the next 14 days as I'm at home on self quarantine. @@SoupedUpRecipes Wow, Wow, Wow! I came off quarantine yesterday and picked up some pork belly from my local butcher and made the Mei cai kou rou recipe today and it was hen hao chi! I find you to be a very good lao Shi and can't thank you enough for all the effort you put forth in your recipes and videos, while I was a line cook in my younger days I never mastered Chinese cuisine but with your tutelage I am becoming a master! If I may part a tip on the dangerous portion. I would not advise placing a cover on the wok while searing the Kou in oil. I followed you instructions as you demonstrated. placing a lid on the wok and can tell you this is why it is very dangerous! The reason it is dangerous is when your searing in oil the meat and the atmosphere within wok are admitting steam. This steam then condenses on the lid you placed on top the wok and when the droplets of condensation become heavy and fall back to the oil and they do so below the surface of the oil. Sense oil is heavier that the condensation it try's to suppress the moisture below the surface, unfortunately as it does this, in turn it is rapidly expanding the moisture molecules to the point they explode. What worked best for me was I dropped the oil temp to 350 F kept the lid off, tilted the wok to face away from me and as long as you ensure the pork was dry before placing the wok you should have little to no issue with with hot oil splatter. JMHO hope this works better for you next time.

Very complicated dish as it pretty much uses every cooking technique but roasting/baking. The end result looks amazing! Loved the story about you being a picky eater and how your grandfather, even in his old age and not able to remember much can still remember to give you the parts you liked as a child. So sweet.

This was one of my favorite things to eat in China. It was always served with little pancakes. Put on a scoop of the greens, then a slice of meat, roll it up and eat it. SOooooo gooood! But every time i ate it, i ended up with stomach trouble. Not sure if it was those mustard greens, but it was almost like i couldn't digest them. Would wake up the next morning feeling like i ate a beach ball.

I made this dish tonight. You were right time consuming and frying was pretty dangerous. Got quite a few scars from battling the oil... but worth it the whole family devoured it😊

Great recipe and presentation as usual. I have lived in Malaysia for many years now, and there is quite a large Hakka population here. They have a similar pork dish which puts slices of Yam between the slices of pork. You can't get it in restaurants - you have to find a knowledgeable old lady to cook it (for special occasions). It's truly delicious - maybe you know the recipe for this? I'm sure it would be very popular with your viewers.

You can use five-spice powder or mix any of these spice powder that you already have in your kitchen: cinnamon, star anise, black cardamom, fennel, cumin, clove, bay leaves, Sichuan peppercorns, black peppercorns, and sand ginger...

this is such a delicious looking dish, i should set aside a sunday to give it a go! I love pork belly, but find it very hard to get the texture right. your instructions make it look easy (except for the part with the hot oil in the pan :D )

Theres a movie I love watching called Eat Drink Man Woman. The opening scene is a master chef at home prepping Sunday meal for his 3 daughters and he makes this, amongst like a dozen other dishes. Watching this reminds me of that opening.
