This was interesting.. Is pressed apples??apple juice to your selves or is something else added to make it cider.. With us the natural yeast from the apples is left to ferment the apple juice thus giving a low alcohol content to the apple juice that is then called cider and is generally fizzy.. Apple juice is the juice of pressed apples with no fermentation applied.. Nice to meet your young fellow.. When helping sourdough to rise is a tray of hot water not added to the base of the oven used to make the rising process more efficient.. YOUR ROLLS LOOKED SPOT ON..
