I’m a little late to the party and just tried this. It’s so good! The only thing I did differently, owing to my slight laziness to make a stiff levain, was to use my starter straight out of the fridge at 100% but thankfully it worked out. Crumb was wonderfully soft, tender, flavorful. Thank you for sharing.

2nd time baking it, this it’s one great bread, I changed the oil for 40g of melted butter, added 6g of coco powder, and for me took 6 hours of proofing before baking it, improving flavor and texture.Also this time around I baked it on my baking stone, since I burned the bottom a wee bit last time on my tray.

The heat in the oven should be up and down or down few minutes and up at the end please..and thanks for the recipe
