I find it's always better to reduce any alcohol I use for seasoning/marinade/etc. If you don't it leaves a slight astringent flavor to whatever you're making, whereas reducing it allows for the flavors to shine through and sometimes adds some caramel undertones.

Awesome test. Suggestion, with your other recent test, I'm surprised you didn't do a coffee based butter, I'd also try one with olive oil poached garlic cloves fortified with a good quality mayo to make it creamy, and not melt when the hot steak hits it. Great videos!

Is that cowboy butter recipe right???? in the video you say one stick of butter 240g and it looks like approx 2 garlic cloves crushed but in the recipe it says 4tbsp of butter 56g and 4 cloves of garlic!! Thats a lot of garlic.

My opinion, Makers Mark is very harsh and strong. Want to know what I bake Killer Pecan Pies with? Woodford Reserve! This is a much much better bourbon whiskey to cook with. Remember, when cooking with whiskey, quality whiskey is always a must or you won’t like the finish results. I would also at a bit of brown sugar in the mix with Woodford Reserve too. Hope this helps, love your channel! Want to Elevate the bourbon even more? Use Chinese 5 Spice and put some Fennel Pollen and chive with garlic and some black pepper to top it off

I use blue cheese with red wine vinegar candied shallots and thyme to my compound butter. Add some black pepper and lemon of course. Roll it in cling film and freeze it to cut off coins when needed.

Guga for the whiskey butter you need to burn off the alcohol. Try sweating the onions and then flambé them with the whiskey to finish. Completely different flavor profile.

GUGA I just tried making the Cowboy butter and I think you meant to type 8 TBSP in the recipe instead of 4. I tried with 4, but it looked nothing like what you made. 8 TBSP looks much more like what you made in the video! Also in the description, you said fresh parsley, when in the video you used freeze dried. I used 2 tsp fresh and it came out amazing. Thanks for the awesome recipe! =D

It should be noted that Maker's Mark is a wheated whiskey, so has a softer flavor profile than a typical bourbon. If you want a bit more punch and sweetness, go with either an Elijah Craig Small Batch or a Russel's Reserve 10. If you want spice, choose a rye - WIld Turkey 101 Rye or Rittenhouse Rye would both be affordable and tasty options.

Try Anchovy butter! Get good quality anchovies packed in olive oil, blend it up with a bit of grated garlic, lemon juice/zest and fold it into softened butter. An extra step I do is whip the butter to lighten it up. It’s delicious and super full of umami.
