Come on we all know dry aged wagyu A5 filet mignon is GOAT- a picanha is good and a ribeye is also good but filet mignon with all the wagyu fat makes it sooooo good. Especially butter basted with thyme and butter

Guys, dry aging is exposing meat to air letting moisture escape. Any coating of solid fat, be it butter, lard or bone marrow would result in the meat being insulated from the air, thus no dry aging will occur. You want to see him coat a steak with bone marrow and let it sit in the fridge for a month, go nuts, but don't call it dry aging-it's not.

Guga, you cooked these steaks in 3 different kinds of pans: clad stainless, cast iron, and carbon steel. It would be interesting to see an experiment where there pans are the only variable.

Guga: One of the biggest mistakes most poeple make is that they don't season it properly. So make sure not only to "SEAR" both sides, but also the edges. 2 advices came together.

He almost always shows things happening out of order, like he'll prepare all side dishes and THEN starts cooking in the water bath. I guess it's for dramatic effect so the music montage is at the end, but sometimes it comes across as really weird, especially if you aren't used to the style of these videos.

That's so surprising because when I cooked a steak in duck fat it was Amazing! Maybe because I used what was left over from when I made duck that had seasoning on it rather than using it plain from a jar.

It is positively wild to see Duck Fat finally knocked off it's proverbial perch as the premiere food item used for basting. I think we all knew deep down that they were going to like the bacon, but the bone marrow was going to absolutely run away with it based on their previous culinary adventures with it.

In Yorkshire UK we can get bone marrow and beef fat from the butcher's. We use the beef fat as butter on beef sandwiches. We use the bone marrow and beef fat in the Yorkshire Pudding tins which make them amazing. You'd love a roast beef dinner from my wife she's an amazing cook like yourself.

I once tried a wagyu striploin steak topped with some bone marrow and my life changed after that. I started looking good at other steaks differently and with disrespect loll nothing compares it as a topping….But you seared it so it must’ve tasted amazing!! I think he did sous vide with butter & the one with butter came out more tasteless than the plain control because a lot of the steak flavor leeched away in the extra fat; not sure if I've seen him do a fat in sous vide ever since

Hi Guga! I love your videos. Keep up the good work! Can you do the experiment where you test is it worth seasoning your steak fresh before freezing, vacuum it, freeze it, so when you need it, unfreeze it and put it in sous vide. That sometimes is more practical because you handle raw meat only once. Thanks! :-)

Can you do a blooper reel of sorts sometime? Like have you ever dry aged something for 60 days and it worked perfectly then you went to slice it and messed up and had to wait another 2 months? Delicious taste test. I'm a firm believer in bacon fat, have not yet done bone marrow... Mostly because my wife kicks me out of the kitchen... But I definitely need to make some butter of the gods, and sear some steaks in it. She will probably kick me out of the kitchen still, but she will definitely enjoy what I whip up while she lets me cook. Thank you for the idea... From one cooking loving husband to another, you are one of the very few chefs out there who makes things I actually want to try my own hand at making, and make me want to wrestle the kitchen away from my wife for a night or two.
