@@varians8762 You can make buttermilk by adding 1 tablespoon of white vinegar to 1 cup of whole milk. Stir then put in fridge about 20 minutes to thicken

This is a great idea. I'm going to overnight brine the chicken thighs and use buttermilk as wet ingredient for the dredge. I've never thought to do chicken this way. It should also be healthier than frying it (kinda like airfrying). Thanks bro for this video.

I have been looking at different grills/smokers for a while now, and I think between you and Harry Soo you have both helped sell me on the Weber Summit. I was initially looking at a smoky mountain or an Old Country Brazos, (while the Brazos looks like a real good deal for the price point, I don't want to spend my whole day managing a firebox). The summit looks like is has the versatility I'd really enjoy more, and with a blower system it looks like I can keep up rock solid temperatures. Thanks for the videos

I just want to say, while I thought the Vortex would just be a so-so accessory to use, it really is a game changer. I've done a ton of chicken with it ( which everyone loves the end result ), but will go with lamb chops tonight, where I usually use baskets or a Slow n Sear on my Summit Charcoal. Thank you for bringing it to my attention. Thank you, again, for promoting some of the Suckle Busters products. I love them all I have bought! Had a chance to visit a retail store that carried some S.B. items when I went out of town. You need to try their peach BBQ sauce. DELICIOUS! Also, I would recommend you try out some 3 Eyz seasoning on pork. My brother-in-law gave me a bag, and it is super-good.

How does the Vortex compare to just using the 2 char baskets in the middle and getting those fired up really hot? Does it come close to what the Vortex can do?

@@cindykee3719 It is something you don’t have to have. It is a funnel with two sides. Having the wider side up is great for indirect l, and then using a grate over it to sear items at the end. With the narrow side up it does actually funnel and concentrate the heat up and around. I am not sure how much of the heat goes out my top center vent on my Weber Charcoal Summit/Kamado, but when I spray oil on my wings they are certainly crispier, and everything cooks faster, Yes, I do flip, but I also turn my grate at times 180 degrees and 90 degrees. Again, a great tool that works, and it is fun finding something that actually works, but it is not necessary to have. It is one of the cheapest investment you can make, and there are generic versions, but it is my go to tool and certain cooking situations. I know what I like, but it is the feedback from my family that makes the Vortex a clear winner. Eventually your baskets will go/wear out after much use. You can choose to replace them, get Slow n Sear or a Vortex, or something else. The further you go trying things and cooking often, you will find things that you like that expand your cooking game. Last thing ai want to try and find us a 24 inch cast iron plancha to use as a big griddle. I have a cast iron griddle and drip pan, and a big cast iron pan, but I would certainly have more fun, and feel I would be complete. Some folks never get accessories or really enjoy their time outside, but it has certainly become a great escape for me, and something that I occasionally feel I have mastered, until I learn I haven’t. Take notes, every cook is different, get out of your comfort zone and have fun, while being safe.

@@cindykee3719 You are certainly welcome. The last thing I bought was a cheap weed burner from Harbor Freight Tools for $25 that I hook up to a propane tank. It gets my charcoal going in a few minutes. Wear a heat resistant glove and sunglasses or glasses to be safe. It had a cheap weld for the halo part that spread the flame, and that broke off, but it still works. No need for a chimney any more, well, rarely. Some people spend over $200 for a tool to light their charcoal.

Now I'm back online with coals/wood chips. Second two cooks came back outstanding with Bogo lump charcoal. Really good chicken thighs yesterday with indirect cook and late lashes of bbq sauce. Tasty I enjoy your videos. You think the wok is worth it?

Great cook! Love that you could re-use the lump from your prior cook. The Summit's efficiency with charcoal is amazing. Did you rotate the chicken? I would have thought it was necessary given the high heat coming out of the vortex, but it doesn't look like you did.

John. I didn’t move the once and achieved those results. It came out amazing! I do recommend using the cooking spray mid-stream to make sure you maintain a golden brown crust though.

Once the temperature hit 400 degrees, did you close down the lower vents at all? And it looks like you kept the top vents almost all the way open. Is this how you got the temps to stay down at 375? I had a hard time keeping my temps below 400 when I did this with the char baskets (I don't have a Vortex). I had to really choke down the vents to keep it from continuing to climb. Thanks for your videos!

You are correct. I adjusted the bottom/intake dampers to help control the temperature. The vortex performed very well by having the center concentration of heat which browned up all of the chicken evenly. I luckily was able to close the lid and set the intake at about 3/4 open and it maintained the temps. Hope this helps!

Good video Dski. I cook pretty much every day using lump charcoal and I'm always arranging it with my hands, just like you. Do your hands a favor and buy a couple pair of Plainsman Premium Cabretta gloves. It won't take long before they look terrible, but they keep on protecting the hands nevertheless. And as long as you don't bring them into the house, your wife will be happy too. I've been cooking on a LSG Adjustable Grill & Smoker which I dearly love, but I also like Kamado cooking, so I'm about to pull the trigger on a Weber Summit.

I tried this the other day. It makes the crust or skin have a strange texture. It makes the topping more like a biscuit than a fritter. Its like air fried fried chicken. But its still pretty good.

Absolutely. The key to getting the crispy skin is all around temp control. If you are able to hold temps around 350 to 400 degrees, it doesn’t matter what grill or accessory you use. I will be posting a crispy Cajun wing cook soon on my Weber summit charcoal grill. I achieved the exact same results without using the vortex. Thanks for checking out the video!

Eric Cho Better targeted heat using the vortex. The diffuser plate would have done well but no way to get this type of crust using the diffuser plate.

I haven’t tried it yet, honestly I didn’t think much about it. It may help cook the chicken even faster. What i worry about is possibly burning the inside edges of the neat as the vortex gets so hot. I’ll try it soon to see what results are achieved. Thanks for checking out the video Ronson!

It’s possible but I believe the vortex give an advantage due to the conical shape which targets the straight through the middle of the grill and promotes even cooking. I will give it a try soon. If you try 1st, let me know. Thanks

Is the Summit the same circumference as the traditional Kettle?

The Summit is 24” like many Kamado grills like the Big Green Egg and the Kamado Joe. The kettle grills are 18” 22” 26” and 37”. Hope this helps
