That roasted duck looked so good it makes me want to go out and harvest one. Only problem is that I cannot cook it like that.i have had salt encrusted duck before but that looked much better. I am now on the lookoutfor a tag for the elusive turducken. I know they are around. I just have not seen tracks yet.😜

Sabaidee Joel! Oh man SAEP SAEP! That duck looked so good. Appreciate the simplicity of it. Salt, smoke and time. Can't beat that low and slow method. Duck heads are such a treat. My sister cooks it all the time. We actually marinate heads in lemongrass, oyster sauce, garlic, fish sauce, pepper and sometimes bee aka bile. Weird combo but it works! Maybe I'll do it for IG one day for you to see. Hope you're staying dry out there - I saw your story about the rain. Take care my guy.

That is so cool your sister makes this, so cool you have this, honestly besides the duck neck, and only from Li and with Li, I’ve never heard of this as a useful thing to cook. Let alooooone with the most stunning and underrated (crazy) Bee as an ingredient as well!! Do you know what though, the best duck Laap that I have ever had was in Laos and they did have a crazy delicious dip that also included Bee, I guess I forgot about that :-)

I did a quick check and there are a number of duck farms in my area. Several Hmong ones too. There is a fancy resturant out in the country that makes braised duck stroganoff, sound good?

Hi Nina :):) thanks for a great question - YES sticky rice is it’s OWN type of rice, you can find it in the USA also called “glutinous rice.”

I love traditional Peking Duck pancakes, BUT my favorite part after slicing the mear & skin for 1st course wrappers, I LOVE TEARING the rest of flesh & skin off the bones & sucking the bones til the fat runs down my chin! I take all the extra meat & fat & make a stir fry. that was the way it was presented & prepared for me 1st time me & daddy had it. then remaining meat bones skin-i don't care it t was left on a plate as long as it wasn't spittin out lol-and all goes in a huge pot to simmer. then cool to clarify & get every drop of duck to save. I save all the fat in a pan under the rack the duck cooked over & render it. it's a sin to waste ducks!
