I have to tell you, I clicked on your website a while back, just because I wanted to see what you were going to do on such a low budget. I fully expected you to just throw something together that was cheap. Boy was I wrong! You got skills girl! A true chef at heart! I am blown away with what you come up with! Not sure it is the healthiest diet for your family, but I remember when we had to just buy whatever we could to feed our family! You have really taken it to the next level! You should be so proud! I hope your family realizes how amazing you are!

I had to come back and leave an honest comment. I was just looking for an idea for dinner tonight, so I decided to try Brooke’s “Tex-Mex- Taters” ( that’s what my family has decided to call it. I also decided to scavenge my pantry and fridge for taco-bell packets and the end of a jar of homemade salsa, a 1/4 pack of the Aldi cheese block and a few pinches of cheddar that was left in a bag in the fridge door. Even my pickiest eaters love it!!! Thank you Brook for the Win, tonight.. y’all got to try this!!!

I'm currently out of pepper. But my aunt always asks for extra condiments and such and once she has a ziplock baggy full she gives them to me. I'm currently using the tiny packets of pepper to season my food. We don't always have money for condiments so this certainly helps us alot and I'm so thankful because I'm a condiments person 😊
@Jewelsquiss16 сағат бұрын
The dollar tree has the cheapest pepper, if you have a dollar tree near you. OR the salt and pepper set you might use camping or at a picnic, are around a dollar at Walmart and not too bad at other stores. I just mean after you have money for it.😊 Using the little packets is a good idea 😊❣️

Girl...a baked tater (not in foil) makes them SO much better than with foil, so fluffy & skin gets crispy. YUM! A dietitian told me that trick years & years ago. Foil steams them so they aren't really baked, they are steamed. Neither sucks, its a tater! You go girl! Great meal!
@susielisle92217 сағат бұрын
@@zenobiaw831Yes, those can be bonus' when cooking. I had to go back & reread my comment. I thought I said (& did) NO foil tastes better as a tip. But yes, I'll eat a tater anway its cooked. So sorry if I wasn't clear enough.

I can't wait to try your potato taco salad, it looks so good. Years ago my MIL taught me to finely dice up some potatoes and cook it into the taco meat to stretch your meat. My brother likes to garden and plants tomatoes, peppers, onions and zucchini in my garden. When it’s producing, I have way too much for me. A few years ago I started roasting all of it together along with olive oil, garlic and spices . Once it was done roasting I use my immersion blender, flavor and thin it out with Knorr’s chicken bouillon stock. The zucchini makes it really thick! Once done, I freeze it. Now I can use it for tomato soup, spaghetti sauce or casseroles. Yummy!!!

My kids laugh at me when we go to a taco shop or the Sam's club cafe and I grab quite a few extra sauces or seasoning like the powder cheese or salt pepper taco sauce. Sam's club in my city has sauerkraut packets that I grab because I'm the only one who eats it. Those extras have helped us when we were tight on our budget. We had hot dogs but no ketchup I had the mustard and ketchup packets. Or we had spaghetti and the kids wanted powder cheese and I had the packets of it.
